Corn Dog Muffins

This recipe rocks! Very good. I of course followed some of the other recommendations, but like it much better as is. Don't change the recipe, it is great the way it is!

Tomato-Bacon Rarebit

This recipe was good, but not great. The cheese sauce didn't turn out to be a sauce at all, more like a soft cheese. The flavor was very mild and I even added an extra amount of the spices that went into the cheese sauce. Other than that the idea of a cheese sauce on a BLT type sandwich is a very good one.

Grandma's Corn Stew

Reviewed: Oct. 20, 2008
I added more veggies and used ground turkey for a more healthier version. I have to say this recipe is great just the way it is. My step-mom would always make something like this, because it was so quick and easy. It never got to simmer very long because it was so good. In my version I added 3 different types of bell peppers and cooked them a little with the ground turkey before adding anything else, so the turkey would pick up the flavor. Then I added corn, mixed veggies, and some peas. I changed the onion to green onion, I cooked it with no lid so more of the water would evaporate and did not add any sugar. VERY TASTY!

Potato Pancakes

This is a great recipe, except I have always seen it with leftover mashed potatoes. That way it is very quick in the morning when running late. Plus my mashed potatoes are already seasoned with garlic, cheese or whatever sounds good, so I can save a lot of time in the morning!

Knefla Soup I

Reviewed: Jul. 19, 2008
I changed the recipe, but I love Knefla soup! I grew up with this soup and I always watched my mom and grandma cut the dough pieces with a scissors. I am so glad my grandma doesn't know this, but I am a vegetarian, so I made this recipe a lot healthier. I added 3 different types of potatoes, 2 carrots, 1/4 cup green onions, 1/2 tablespoon of fresh dill, 1/2 cup egg plant and 2 teaspoons vegetable bullion and 2 teaspoons chicken bullion. Didn't add any salt, added 2 cloves of fresh garlic and only 2 tablespoons of butter. I also exchanged the evaporated milk for a dry milk version. Plus my family loved it so much I had to make a double batch the next time!
