Pumpkin Bread IV

Reviewed: Oct. 14, 2009
I have to say, I think this bread is just ok. I made it exactly as called for except I didn't add any raisins, chocolate chips, or nut. I think these might of made it better. It was however a nice, moist loaf which I like, just a little plain.

Big Soft Ginger Cookies

Reviewed: Oct. 9, 2009
I just made these and they are fantastic! I don't know why the recipe says it makes 24 cookies - those would be some gigantic cookies! I made 45 out of this recipe and they were fair sized! They taste similar to a ginger cookie from my favourite bakery, except those have raisins and are cut into squares (I think I'll try that in the future.) You can bake them for 10-12 mins for soft cookies or 15 for crispier cookies like gingersnaps. I do half and half!

Zucchini Pancakes

Reviewed: Aug. 29, 2009
These were just kind of gross. They tasted like an omelet with zucchini in it, not a pancake. Too much egg flavour. Edible but I won't be keeping this recipe.

Zucchini Cookies

Reviewed: Aug. 29, 2009
These were okay. I made them exactly as the recipe states except left out the cloves because I didn't have any. They just weren't anything spectacular to me. Not as good as zucchini bread so I think I'll just use my zucchini for that.

Mom's Zucchini Bread

I replaced half of the oil with applesauce and this still turned out amazing! Very good and moist! My husband and my toddler loved it.

Whole Wheat and Honey Pizza Dough

Reviewed: Aug. 12, 2009
I used this recipe for homemade pizza on the BBQ. (You just oil one side of the dough, put it right on the BBQ rack, let it puff and brown on the bottom, flip it over and add your toppings and cook until desired crispiness - so tasty!) It turned out great! It's a simple, easy recipe that tastes great - perfect for a quick meal or snack. And it's a lot healthier too!:)

One Bowl Chocolate Cake III

Reviewed: Jul. 26, 2009
This cake was quite good, I did up the cocoa to 1 cup and let it sit for a day as some others recommended. However, it still isn't the "perfect" recipe that I've been looking for, I've had better chocolate cakes. But it is very good and pretty moist.

Zucchini Brownies

Reviewed: Jul. 25, 2009
I have to admit I was a little skeptical too about zucchini brownies, but these were the best brownies I have ever tasted! I can't keep away from them! The icing definitely makes them but the whole recipe is phenomenal! The best way to use up that zucchini from the garden! (Although not the healthiest, but a great indulgent treat!) *Note: the batter was very dry, actually it was just crumbs, I had to add 1/4 cup of milk before adding the zucchini and it turned out great!

Best Big, Fat, Chewy Chocolate Chip Cookie

Reviewed: Mar. 22, 2009
I have a recipe that I usually stick to for chocolate chip cookies from my Good Housekeeping Cookbook that I think is fantastic but I wanted to try something different so I chose this one based on the high rating. I personally found these cookies nothing special, my Good Housekeeping recipe is wayyy better! I didn't like the taste of the dough or the texture, but you can't go wrong with chocolate. I'll stick to my regular recipe.

Cathy's Banana Bread

I just made this bread and it turned out spongy, not very flavourful to be honest. Not a recipe worth keeping in my opinion.

Grandma's Gingersnaps

Reviewed: Feb. 28, 2009
These cookies are delicious! I made them a little too big by mistake so they didn't turn out crispy or hard like traditional gingersnaps, they were quite soft but this made them taste just like the cookies you buy at our local Spicers (except Spicers have raisins or dates in them). They are fantastic!

Zucchini Coconut Loaf

Reviewed: Feb. 23, 2009
I just made this and the only alteration I made was using applesauce instead of oil and raisins (not boiled) instead of currants. Sometimes applesauce makes things turn out too spongy I find, but this loaf still turned out amazing! Very yummy with so many different flavours (zuchinni, coconut, cinnamon, nutmeg, raisin - it was delicious!) Definitely a keeper! *Edit* I was just reading through my Company's Coming "Muffins and More" recipe book and this is the exact recipe from that book! Either way, it's still delicious!

Caramel Popcorn

Reviewed: Jan. 13, 2009
This popcorn is great and fairly easy to make! I halved the recipe and used 1 1/2 bags popped butter popcorn. It still tasted great although next time I think I'll try and use plain popcorn. My husband loves it and it's a great way to use up those bags of popcorn sitting around (we both don't really care for plain or buttered popcorn). It would also make a nice gift to give someone. 5 stars for sure! Update: The first time I made this, I forgot to add the baking soda and vanilla. It came out like the caramel popcorn you buy and tasted great. The only complaint was that there were chunks of the coating that were really chewy. I just made this again and added the baking soda. It immediately puffed up and wouldn't go back down (runny and sticky) when baking and so it's all light and fluffy, not like candy, more soft. I think it worked better without the baking soda.

Delicious Ham and Potato Soup

Reviewed: Jan. 11, 2009
I made this recipe exactly as stated except I left out the ham. My husband wanted to try a homemade potato soup so I tried this recipe after seeing how highly rated it is. I made crispy bacon pieces and added it in before serving. My husband said, "This is the best soup I have ever had in my life!" With a comment like that, how could I not give it 5 stars? This recipe is definitely a keeper!!

Classic Bran Muffins

Reviewed: Oct. 5, 2008
This is the best bran muffin recipe I've ever tried - and so easy! I love substituting the ingredients for healthier options as well and it always turns out just as good! I substitute the oil for applesauce, flour for whole wheat, halve the sugar, and use frozen blueberries instead of raisins. You can substitute any fruit! I keep them in the freezer and pull one out at a time to microwave. Always a healthy treat!

Banana Crumb Muffins

I personally found nothing special about these muffins. They tasted like just a softer banana bread and the crumb topping is always a mess when eating. Not a keeper for me.
