About this Cook
i'm a licensed mental health counselor by day and a musician/artist by night ;) i also maintain a blog on organic living, centered around South Florida, but I reference everything everwhere else as much as I can =) ......................... http://www.organicsmiami.com
My favorite things to cook
~desserts: cheesecake, cupcakes, cookies, flan, etc. I do much better at baking than anything else :) ~entrees: pastas, hamburger mac & cheese, cuban picadillo, tacos...very easy things, get it? ..............do drink recipes count?
My favorite family cooking traditions
all my family ever used to cook was cuban food- thats it! ha so i'm trying to start my own eclectic traditions...
My cooking triumphs
~my last cheesecake was heaven!!! ~love my buttercream frosting from scratch! lol ~making FLAN, organic and cuban style :)
My cooking tragedies
oh there's too many, including the most recent "egg overseasoning fiasco" of the Fall of '08.

Strawberry Cream Pie
came out too runny and had to freeze it overnight, it was more like a frozen pie than a fluffy pie. I think it may have been that the strawberries were too watery, or I did not fold in the cream well enough. I may or may not try again, its too bad because these strawberries were handpicked and so sweet.

Chewy Coconut Cookies
the cookies were OK following the recipe exactly. they're a little plain. however i did a side batch with extra sugar and chocolate chips and those were awesome! also the serving size is way off. my recipe yielded about half the amount, i like regular size cookies. if i did teeny-tiny ones, maybe i would have had 36 as says. easy & good recipe nonetheless. lots of room for experimentation!

Fluffy French Toast
easy to make, next time i'll add a little more flavor: cinammon, nutmeg, maybe allspice...
