Homemade chilli beans every Christmas eve.
My cooking triumphs
Enchiladas. I don't know why, but I was afraid to make them. I made my own sauce and they came out great. My husband doesn't want any other than mine now.
My cooking tragedies
Once when I was in my early twenties I tried to make vegetarian chilli. I was short on ingredients and tried to substitute. It was absolutely terrible.

Jambalasta
My husband loved this! I left out the shrimp because I didn't have any on hand and it was still great. I think you can use any combo of the meats or any one meat by itself. Very good. Different too.

Taco Seasoning I
Great! I think it was better than the packaged taco seasoning. Had a nice kick to it, but not too spicy for the kids.

Best Ever Jalapeno Poppers
I disagree with anyone who says these were bland. Of course the spice of the jalapeƱos depends on the beginning heat of your jalapeƱos. Removing the seeds does not effect the heat as the spice is in the membranes. Ours were quite hot. I used cream cheese, half cheddar and half Monterey jack cheese as well as bacon as the recipe called for to stuff ours. So good!! The crust was crisp and delicious! I did blanche my peppers for two minutes in boiling water once they were halved and cleaned. The steps it takes to make them are totally worth it. Better than any you can find in a restaurant.
