I am a married mother of 2 grown boys and 2 grandkids. I live in Sweden and they live in Iowa. I am handicapped, so now I have lots of time to play with cooking. I am having so much fun, even when things flop. :)
My favorite things to cook
I like healthy things with lots of whole grains and legumes and sweet potatoes. My husband gets tired of healthy so once in awhile I will make him a down home Iowa meal, meat, potatoes, gravy, the works. Then he tells me that I can stay. :)
My favorite family cooking traditions
I used to love holidays with my whole family back in Iowa and I would cook up a storm! Now we have few traditions with just us two, but anniversaries and holidays are always special, and usually a new recipe is tried.
My cooking triumphs
My first time cooking my husband's favorite dish (he is from Holland) haché with cooked red cabbage. He loved it and said it was better than his mothers. I did not believe him for a second, but it made me happy.
My cooking tragedies
Where do I begin? The one I remember the most is when I was a kid and tried to make filled cupcakes. They were so bad the dog would not eat them! I threw them away, and still have not tried them again... maybe someday.

Pineapple Carrot Bread
I deviated a bit from the recipe, but it turned out fantastic!! I used half brown sugar, doubled the cinnamon, added nutmeg and cardamom. Instead of walnuts I used raisins that I had soaked in the pineapple juice. My pans were a bit larger so it only took 30 minutes to bake. My husband has not tasted it yet, but since a corner broke off when I tipped it out of the pan, of course I had to taste it ;), Thanks for the post!!

Mango Chicken Piccata
I made this a few days ago, after my husband found a good deal on chicken breasts. It was absolutely delicious! There was nothing that I would change here. It was great with jasmine rice. My husband said "this chicken died for a good cause" :) Thank You greatfoodaddict!

Honey-Garlic Glazed Meatballs
I live in Sweden. These are the closest thing to authentic Swedish meatballs that I have ever seen! I am not sure where people got the idea that Swedish meatballs have a gravy type sauce, but this is how they REALLY are. Thank You Taste of Home, for a real taste of home. :)
