Whole Wheat Snickerdoodles II

My daughter and I just made these cookies and are having a hard time leaving them alone! Totally delicious! Since we didn't have any whole flour on hand, we just used all-purpose flour. Still turned out awesome. Will try with the WW flour next time!! :)

Chicken Fajita Marinade

Yum! I had to pull myself away from tasting the marinade in order to get the chicken into it! Doubled up on all spices and added freshly grated pepper. I couldn't help poking a fork gently throughout each chicken breast. I wanted to MAKE SURE this marinade got soaked up! I also used the marinade while grilling the chicken. Thanks!

Tasty Tuna Burgers

This was so delicious! I left out the dill and used two egg whites rather than a whole egg. I have enough left over to have another one for lunch tomorrow! I can't wait! Great recipe!

Asparagus Wrapped in Crisp Prosciutto

Great idea, but it just didn't work for me or my husband! Way too salty even though I cut down on the prosciutto and added the cream cheese. Maybe my prosciutto is to blame (?). I'm not picky; I love the idea, and I'm not done with this concept yet!

Rabbit Stew with Coconut Cream

I love rabbit more than chicken, so I was excited to find a new and different recipe. My husband is a traditional rabbit cooker (you know, hunter style or cream style), which is fine, but I was ready to get out of the box. My kids and I loved this recipe! I did tone down the sweetness by correcting it with more chicken stock and boiling it back down (for my husband). I also cooked everything in a big dutch oven and just pulled out the rabbit to saute the veggies and drain the oil. I did remove the bones from the rabbit while the veggies cooked; that allowed me to eat my dinner rather than cut up my children's! AND no child felt badly about cutting up Bugs Bunny :). I think it helped! 5 stars from me and the kids and 4 from the traditional American hunter (whatever! I'll be making this again!) YUM! Oh...I couldn't help but add a touch of saffron. Just couldn't help myself! It was beautiful and delicious! I would have taken a picture, but I was too excited to eat! Even the next day, I had to say to a friend who was over, "Here, you have to try this!!" I know I'm blabbing, but it really rocked!

Baked Pork Chops I

Easy enough, although I did add some fresh thyme and garlic to the sauce. I found it a little bland, but ya' know what? No one complained and the husband was happy :). 3 stars for me, but a peaceful dinner without complaints from the picky kids gives it a 4. So in my book, success! 45 minutes total for chops and sauce was all it took for a juicy meal.

Traditional Osso Buco

I followed Coverdale's advice about browning in pancetta and was very happy with that. No veal shanks at the market, so I had to use chops. We loved the recipe and will use again! YUM!

Sloppy Joe Sandwiches

We love Sloppy Joes, but this recipe just didn't work for my family. I followed the recipe exactly to be fair. Maybe it's all the ketchup and powdered spices. We found it blah. Sorry :(.

Tanning Bed Drink

I forgot how much I love these! Even my husband has been asking for this tooty-fruity drink. I must admit, however, that I add more rum than pineapple juice and a splash of Collins Cherry Cocktail Syrup! Thanks for the reminder!

Flank Steak with Garlic Wine Sauce

My family loves flank steak. I slather on crushed garlic, fresh pepper, and some kosher salt then grill or broil until barely medium rare. A reviewer mentioned that it is hard to keep the meat warm. I have found that if I put it on the lowest rack of my oven, have broil on low, and keep the door slightly ajar, the meat rests wonderfully and still stays warm (since I cook it slightly less than medium rare) while I complete any finishing touches to the meal. I slice it at the last minute before serving. Really, I was going for something a little different by adding this sauce recipe, so I can't rate the steak portion of the recipe. My whole family loved the sauce! Thanks!

Matthew's Bearnaise Sauce

The easiest Bearnaise Sauce yet! For my family's taste, I did add a little fresh lemon juice, a touch more tarragon and salt, and a good dash of cayenne pepper. I poured the sauce over grilled beef filet mignon which was topped with an artichoke heart. I loved the ease of this recipe; super creamy too! This will replace the recipe that I grew up with and use with beef fondue. Thanks!

Thai-Style Chicken with Noodles

Good base recipe; I added more garlic, ginger, soy sauce, a bit of salt, Sriracha chili sauce, and green curry paste only because I know my family's taste. Cream not needed. I also served it over rice rather than the noodles - again, just a family preference. My kids request this dish regularly!

Smothered Filet Mignon

Simply put, when asked his rating, my husband raised his left hand as he was taking a bite with his right and showed me five fingers! This was awesome. I had to use gorgonzola mixed with some blue cheese dressing because that was on hand for our impromptu menu. I also perfectly broiled the meat since it was -2F outside and I was in no way going to grill! YUM!!!
