Big Soft Ginger Cookies

Rave reviews from the cookie-eaters. I replaced the water with OJ and put it in the fridge for about 30 min before putting them on the cookie sheet. I'll leave them in the fridge a little longer next time.

Gypsy Soup

Very good. I thought it was more of a stew than soup. I added a little barley because I love it, and an extra cup of water. Other than that I stuck to the recipe. It was tasty, hearty and easy. I made it in the slow cooker (low for 8 hours).

Cream Cheese Pound Cake I

Wow, this is a good, HEAVY pound cake. I reduced the sugar to 2.5 cups and the almond to 1/2 tsp (still very almond-y) and increased the vanilla to 1.5 tsp. No other changes. I mixed it very well, so it rose beautifully. I baked it in a bundt pan for 1 hour and 15 min, turned out perfect.

One Bowl Chocolate Cake III

Delicious! I added a shot of espresso and enough water to make 1 cup, but I might do two shots next time, I didnt really get the flavor. Still, the cake is very good. The batter is super thin though, I was worried. turned out fine.

Blueberry Cream Cheese Pound Cake I

Awesome! I replaced half of the oil with melted butter and used French vanilla cake mix and a whole pint of fresh blueberries. My blueberries were pretty evenly distributed but i put about 1/3 of the batter into the pan, then mixed in the berries and added the rest. It was fantastic. I think I'll try a lemon cake mix next time.

I added some garlic and doubled the mushrooms and wine. Whatever flour mixture was left over I threw with the butter just before I added the wine. Wonderful!

Ratatouille

Great! I'll admit, I strayed from the recipe. I added yellow squash and okra and made the whole thing on the stove. It was great! I sauteed the onion and garlic until soft, then threw in all the other ingredients. I covered and let it simmer about 15 min, then cooked uncovered until most of the liquid was evaporated. Yum!

Chicken Enchilada Casserole II

AWESOME! I halved the sour cream, used cream of mushroom soup, and fake chicken sauteed with taco seasoning to make it vegetarian. I also halved the cheese, used black beans instead of chili, and added a can of corn. Ok, that's a lot of changes, but it was terrific! *UPDATE* I was out of black beans so I used refried beans and it was pretty good. I liked the black beans better, but my husband liked the refried beans.
