About this Cook
I am always looking for a new recipe! I love to try something new in cooking. My husband is a great sport and isn't picky. My family keeps encouraging me to start a catering business. Who know, maybe I will
My favorite things to cook
Meatloaf, chicken, and desserts hands down.
My favorite family cooking traditions
My mom and I have been trading off making Thanksgiving and Christmas dinner for the last few years. It's a lot of fun, and my parents appreciate family get togethers more since Mom isn't spending the day in the kitchen!
My cooking triumphs
My first Christmas dinner was a hit! I will always be proud of that. Everyone in the family loved how well I had planned and everything was delicious thanks to websites like Allrecipes, old Taste of Home recipe books, and Betty Croker!
My cooking tragedies
I had a kitchen disaster recently, making enchilada's. I took shortcuts to "save time." BIG MISTAKE! Dinner was ruined and I was so upset we ended up going out for a pizza! It doesn't pay to take short cuts with some recipes! I've learned my lesson!!!!

Jen's Heavenly Egg Salad
Very Good! After reading reviews from others decided to use only 1 T lemon juice which gave plenty of zip. I didn't have any onion, but just bought fresh onion buns from our local Breadsmith's so I used them to get that onion flavor. Yum! Thank you for the great post!

Mozzarella Tomatoes
Bravo! This recipe is great. I have an abundance of tomatoes this year and have looked through so many recipes. This is a great side for breakfast, lunch or dinner. I made this for breakfast today. My husband and I both enjoyed it. I don't use salt, so used garlic powder, and also added 1/4 tsp of fresh ground black pepper. And doubled the tomatoes. Delicious! Thank you for the post.

Yummylicious Japanese Beef Croquettes
This is a good basic recipe for croquettes. I grew up eating these as my Japanese mom taught us to use chopsticks before a fork! The only thing I would suggest is to not use flour just drege in egg batter then panko. (plain bread crumbs aren't the same. Panko is a must.) Soy sauce is really not necessary. Green onions and a little pepper to your taste are great. I like to eat these with a little yellow mustard, but the rest of my family uses tonkatsu or the kids use ketchup. Yummy!!!
