I made them according to the original recipe, used vanilla yogurt and a golden delicious apple. I thought they were pretty bland, but OK. My toddler put away two of them though, so I will keep making them for her. Next time I will try adding a little more spice to the batter.

Pumpkin Pancakes

My toddler loves these. It's an easy way to sneak some extra good stuff into her breakfast. I make a whole batch and freeze. 30 seconds in the microwave and breakfast is ready! My only complaint is that they come out a little too thick. I'm going to try again using a mold this time.
