My favorite things to cook
I'm really on a soup kick these days...so many ways to provide good, healthy nutrients to my family; half the time with ingredients they don't even know are in there! (like chick peas, pureed up as the base of a slightly thicker soup). I do love to bake too, and try out new recipes!
My favorite family cooking traditions
Having a British father, we often had Roast Beef on Sundays, with mashed potatoes, yorkshire pudding, peas and homemade gravy. My family loves this meal too though we only have it once in a while as a treat; as we try to eat healthier meals on a regular basis. It brings back wonderful memories of my dad and mom made it all so good! Still a family favourite! Baking cookies on rainy days has become a family tradition with my kids. Something about the aroma of warm, fresh baked cookies (usually oatmeal, chocolate chip)with the damp, earthy smell of rain and the cloudy skies that make everything cozy and comforting.
My cooking triumphs
More than anything, I have instilled in my kids the joy of baking, and the satisfaction of sharing their accomplishments with the family and others...as well as the comfort foods can bring. They take such pride in what they make! I often will arrive home to their newly created treats! I love that they find it a comforting outlet, as do I!

Baked French Toast
Found this recipe the morning of...hadn't read the reviews. Not big on mucky french toast so wasn't concerned with not having the overnight soak. As I was putting it together, I felt there was too much liquid, so cut back 1/2 cup each milk and cream (thank goodness). 20 min to soak then combined topping mixture, reducing all parts to 1/3 of what recipe called for (again, thank goodness...plenty sweet enough). Puffed up beautifully and tasted great, though still a little on the mucky side underneath...but not bad. I cooked it a little longer too. Was glad for the changes I made, but will continue to seek a drier french toast recipe.

Whole Wheat Biscuits
I made these tonight to accompany my French Onion with Garlic soup. What a combination! I doubled the recipe (except for the sugar) to accommodate a family of five, although we still only got one each with 2 left to share. I added dried cilantro, fresh finely chopped chives and a tablespoon of flax seeds which added a nice, healthy crunch. Delicious! Everyone loved them and I'll definitely be making these again.

Grandma's Wheat Germ Cookies
I quite like these. Oatmeal choc. chip cookies are a favourite of mine, and I'm always seeking healthier versions. These are tasty...not so greasy as the traditional versions made with butter. The walnuts are necessary for that nutty flavour. Will definitely make again!
