Broccoli and Rice Stir Fry

I really liked this one. I added some ginger and about 1/4 tsp minced garlic to the oil. I also used teryaki sauce instead of soy. My husband and I both enjoyed this with an Asian flavored chicken.

Blueberry Oatmeal Scones

These were okay. The dough was much stickier like a cookie dough so they ended up looking like cookies. They also seemed really dry to me. The flavor was good, but the presentation was misleading and made me wanting oatmeal cookies.

Broccoli Quiche with Mashed Potato Crust

This was a very tasty dish. I had a bunch of problems with getting the crust right, though. it was way too soupy, so I added some flour. Still too soupy, so I microwaved it several times for a minute to turn the potatoes into more of a paste before I could do anything else with it. That was a pain. But other than that, it was good. I will probably make this again.

Broccoli Hash Brown Quiche

I really enjoyed this quiche and have made it twice already. I pressed out the excess moisture from the hashbrowns and baked them a little first like some of the others suggested. The first time it didn't seem like it had much flavor, but had alot of potential. The second time I made it, I lightly salted the hashbrowns before baking them. I also added a little diced ham, a little onion, and a little pepper-jack cheese. My husband and I both agreed that it tasted better the second time with the added flavors. I will definitely make this again!

French Toast Bake

This recipe was great and a great make ahead for a nice hot meal in the morning. Mine took a little longer to cook through in the center, but it was worth it. Loved the little crunch of the pecans. I served it with blueberry syrup and Cool Whip and it was a big hit at my ladies Bible study!
