About this Cook
I'm astay-at-home-mom to two wonderful girls. I'm an amateur photographer hoping to start my own business some day. I'm an avid scrrapbooker and cross stitcher too.
My favorite things to cook
I've always been a big baker - specifically desserts. I'm hoping to get into other styles of cooking so I can make healthy and delicious meals for my family.
My favorite family cooking traditions
Coming from an Irish family it has to be St. Patricks Day Corned Beef and Cabbage. My husbands family is Italian and making 'the family's sauce' is an all-day affair that yields over 15 quarts of sauce!
My cooking triumphs
Just about any cake - I'll take cake decorating classes eventually but for now I'm pretty good, if I do say so myself!
My cooking tragedies
Grilling... irish grilling is burning, seriously.

Cracked Sugar Cookies I
This is a very tasty cookie and very easy to make. I did not, however, like the texture of the dough or the cookie. It was very dry and hard to roll into balls. Not only that but putting in the oven just until the cookie started to crack yielded a cookie that would fall apart if handled normally. My husband rates cookies by their 'dunkability' in milk - this cookie failed miserably as it fell apart just holding it above the cup!

Apple Muffins
These are very tasty and very easy to make. I ended up adding a bit more apple juice than was called for as the dry ingredients didn't mix well and it still turned out well. I doubled the apples and doubled the cinnamon. I also used baking soda and cream of tartar instead of baking powder (because I didn't have any on hand or at least so I thought until I found some putting everything back in my pantry) and it still turned out fabulously. Will definitely make these again!
