Paula's Bread Sticks

Reviewed: Aug. 23, 2009
I'm sure these are good as the recipe is written. I used wheat bread and some garlic powder in them (that some people recommended). We hated the sweet bread with a garlic taste. Threw them away. I hope to make the "as written" recipe soon.

Slow-Cooker Chicken Tortilla Soup

This is good, but needs more spice in my opinion. I also used frozen chicken- which is just easy.

The Best Meatballs You'll Ever Have

These deserve five stars. I liked it that they stayed together and didn't fall apart. We all loved them and I think that they will be the only recipe I use from now on.

This was a great, easy dish to make. Perfect with a bit of cheese and sour cream. The tortilla chips on top was perfect.

Ground Turkey Casserole

Reviewed: Mar. 8, 2009
This was okay. But I felt that the sour cream and cream cheese was too rich, and I felt kind of guilty eating/serving it. It didn't seem very healthy. I don't even think using "healthy turkey" made this feel healthy. However, my husband and kids liked it. I just don't think it is a healthy choice for dinner.

Lemon Square Bars

Reviewed: Mar. 8, 2009
Use softened butter, not melted. Cut in the butter with two knives until you have a fine texture. The parchment paper idea was great. I didn't even need to clean the pan. I added two additional eggs to add more filling (which seemed to turn out just fine). I think adding finely grated lemon zest is a good addition. I also baked the crust at a lower temperature (315) as someone mentioned, and I feel that was a great decision. The crust was perfect.

Swedish Meatballs

Reviewed: Jan. 31, 2009
This was great. Our whole family loved it. I made it with ground TURKEY, and it worked out fine. I added one extra bullion cube, in order to have a more "beefy" taste. I also added some extra bread crumbs to bind the meatballs. We love sauce, so I recommend doubling the sauce. The noodles soak up a lot of sauce. It's nice to have more than enough sauce!

Lemon Chicken Tenders

Reviewed: Jan. 31, 2009
My two children loved this. It is a great way to avoid frying chicken. Next time I want to try it with fresh lemon juice (I used bottled) to avoid that lemonade flavor. I did use cornstarch to thicken the sauce. I think the sauce did need to be thickened.

Asian Orange Chicken

Reviewed: Jan. 25, 2009
Great sweet/sour recipe. Adjust the orange to your liking. My kids thought that it had too strong of an orange flavor, my husband and I thought it was perfect. I served it with a wild rice mix and broccoli which seamed like a good combo. This might be good with beef as well.

Microwave Mochi

Reviewed: Jan. 11, 2009
I've tried several mochi recipes (steaming, cooking in balls in boiling water) to make for a Girl Scout event. Of the three recipes I've tried, I found this one is the best. I lived in Japan for a year and found that this recipe has a great, soft texture. I added two drops of red food coloring (which looks like traditional Japanese mochi). You could also add two drops of green food coloring as well. Traditional Japanese mochi is usually pink, green and white. I LOVED the powder that is used in this mochi recipe. I do not like using plain cornstarch (has a chalky feel), so the addition of sugar and salt made it perfect! I can say that if it is cooked too long you will get hard corners (I'd use the shortest cooking time). I used an 8 x 8 glass baking dish. If you don't have a plastic knife, just dip your knife in the powder before each cut. I found that this worked well. Also, mochi is kept at room temperature. So, do not put in the refrigerator, or else you will get hard mochi. Good luck!

Baked Onion Dip I

Reviewed: Jan. 2, 2009
This is an easy dip to make with few ingredients that are usually on hand. I recommend cutting it in half if there are just two of you. I also used half fresh, grated Parmesan half Kraft Parmesan. My husband and I felt pretty guilty after eating the whole batch. It is a bit greasy. But, it is very, very good. Next time, I might try to add some cream cheese to the mix. I think you'll like this dip if you love onions.

Creamy Au Gratin Potatoes

This is a great recipe for year round occasions. I diced the onions, which I think adds to a better texture. You could put diced ham in this for a casserole. This recipe is much like making traditional macaroni and cheese.

Cornbread Stuffing Southern Style

This was an excellent recipe. Add liquid slowly to your liking. Be careful with the cayenne pepper- it might sneak up on you. I doubled the recipe and used Marie Calendar's mix. I did not think that it was too sweet. I found it to be a nice balance between sweet and savory.

Ham with Pineapple

Reviewed: Dec. 25, 2008
This is a great ham recipe. I cooked a 10 lb. ham and covered it with parchment paper and then foil for the fist hour or so. I agree with some other reviewers- double the sauce if you want to have sauce to serve with the ham. It was very moist.

Slow Cooker Ham

Reviewed: Dec. 12, 2008
This is a good recipe, but I want to warn people not to overcook the ham. I think the cooking time is too long for this recipe. I would cut it down by two hours (check for doneness of course). Otherwise this is a good, easy recipe. Enjoy.

Water Chestnut Wraparounds

Reviewed: Dec. 12, 2008
Very yummy! I made a test batch before my party and wished that I had made more for myself. They were great and I even had a few guys ask me how I made them. Most people like sugar, salt, bacon and crunch- you get it all with these appetizers! I did do as others recommended- rolled them in brown sugar. I personally think that the addition of brown sugar is a must. These also can be made ahead of time. I asembled them on cookie sheets covered with parchment paper and lightly covered them with plastic wrap- then put in the fridge for a few hours. They cooked well- and the brown sugar soaked into the bacon.

Jalapeno Popper Spread

Reviewed: Dec. 12, 2008
Excellent recipe! This can be made ahead of time. Because I refrigerated it (minus the topping), it needed more cooking time. I covered it with foil and baked it in the oven for about twenty minutes. I then took the foil off and then added the topping(so it would not burn). I used twice the jalapenos. I also used Panko bread crumbs mixed with shredded parmesean cheese. I did spray the topping with a few sprays of Pam cooking spray. If you like jalapenos and cream cheese, you'll love this recipe. I think this recipe is best if not altered.
