Gourmet Mushroom Risotto

This is comfort food at it's finest.I used this recipe for my first go at making risotto.I kept the broth on the burner so it was warm for each addition.You really must get everything ready before starting as you will not be able to leave the pot once the stirring begins.I used a heavy enamel dutch oven so that helped with the sticking issue.Will make this a part of our regular menu.

St. Patrick's Day Zucchini-Oatmeal Cookies

This is a very good cookie.There were bits of green throughout. I took one reviewer's suggestion and added a little freshly grated nutmeg.The cookies were not so sweet and you could really appreciate the subtle spice.I doubled the batch so I got a little over 4 dozen.But I was only able to take 3 dozen to our bake sale for my husband could'nt stop"testing" them.

Spinach and Feta Pita Bake

This a good one!Great after work throw together meal that the family loves.I added Kalamata olives (sliced) and some diced red onions for extra flavor.

Italian Wedding Soup II

This a pretty good basic recipe for this type of soup.When I make this I use half very lean groung chuck & half lean ground pork.The family doesn't care for the egg mixture at the end. So I skip it (that's another kind of soup altogether. The only thing missing at the end is the addition of finely grated lemon zest . Just a little. It really gives the broth a fresh finish.

Bread and Butter Pickles II

I love this recipe.It is similar to one I have been saving in an old Woman's Day mag. since 1982.It was an Ohio State Fair Blue ribbon winner.I like to crinkle cut my 3" x 1" cukes about 1/4 inch thick,and use a mixture of red ,yellow & green peppers. Very colorful.
