Mexican Casserole
This is very easy and pretty good for a quick weeknight dinner. I use refried beans instead of ranch style (not quite sure what those are). I also used a packet of taco seasoning instead of chili powder and a can of Rotel.

Easy OREO Truffles
I wish I could give this more than 5 stars! I made these for a baby shower and everyone was RAVING about them! They are so easy too if you cool the cream cheese mixture before dipping them in chocolate. I will definitely be making these again.

American-Italian Pasta Salad
Made this for a baby shower and followed the recipe exactly except for leaving out the salami to keep it vegetarian. I thought it was okay but needed more salt. Next time I will include the salami and maybe some diced cheese.
