Easy Mashed Potato and Roasted Vegetable Enchiladas
I loved this! I finished the leftovers in two days - this was really easy to make and very filling! I served it with salsa and guacamole, yum!

Curry Pumpkin Soup
I was a little unsure when I was putting this soup together, but one taste and I was a goner. I can't wait to make it for my parents and sisters when I go home for christmas. Delicious! Oh and I didn't change anything.

Chocolate Oil Cake
