Garlic Mashed Potatoes Secret Recipe

Can't say enough about these potatoes! Followed the recipe the first time which was great, but changed the second time to make healthier but still amazing! I only used one stick of light butter for 5 lbs of potatoes (land o'lakes, half the fat all the taste) used about 3 T. of the butter to saute the garlic for about 5-7 min. I would decrease the garlic a tad if serving for company and you're not sure if they love garlic. This really brought out all the flavor of the garlic, added it to potatoes and put about 1 cup of whole milk into the pan to warm it up. Only needs about 30 seconds. You may need more milk depending on the consistancy you like. Omitted the oregano (good with but better without). Have also made it with and without the Romano. Both ways are great! I also added freshly ground pepper and then mashed with a potato masher. Yummy!!

Gnocchi with Sage-Butter Sauce

When I added the sage it all clumped together into one big mass! I took the clump out, added the gnocchi and stirred it in what was left, then sprinkled sage, parmesan and pepper on top and stirred again. I did not care for it all! I don't get how this got such good reviews..

Tasty Tender Pork Tenderloin

This was fantastic! There's not much that my bf get's really excited about. I usually get "It's good baby" This he really loved and requested that I make it often! Usually I have to ask if he liked it and is it worth making again. There was no question this time. I didn't change a thing!

Tangy Slow Cooker Pork Roast

I made this roast as the recipe stated except for cutting the sugar in half as recommended by several reviewers and it was pretty darn good as a roast, but my favorite was taking the leftovers and making pulled pork sandwiches. I shredded the roast, added the juice from the crock pot just to make it nice and wet and then added sweet baby ray's barbeque sauce and WOW!!!

Zucchini Alfredo

I was suprised by how good this was! The changes I made were doubling the garlic (because I love it so!), added red pepper flakes to give it a kick, used reduced fat cream cheese in an attempt to keep my girlish figure and I used dried basil and it was still fantastic!! Next time I will use fresh basil and try it over rice. Yummy!

Sweet and Sour Meatballs II

I made these after reading all of the reviews and I was so disappointed. My 13 yr old son who eats anything and everything didn't even like them! Too sweet, too sour, too many bread crumbs. I was hoping this would be a good option for me because I like sweet and sour but I don't like chunks of fruit with my meat as most recipes call for. Oh well, on to the next. . .

Baked Ziti IV

Wow! The sour cream really tops this ziti off perfectly! I used reduced fat sour cream, 1% cottage cheese and part skim mozzarella,ground turkey and turkey sausage (casings removed) to cut back the fat a little. I also did not use rosemary because my grocery store was out of fresh, but I did use extra garlic and it still turned out wonderful! Next time I will try the fresh rosemary as well as adding oregano and basil as many others suggested. Guess my point is don't be afraid to try this if you don't have the rosemary, although I'm sure it makes it more wonderful, It's still so worth it without!

Green Bean Stir-Fry

My 13 year old son, an aspiring chef, made this while I was making the main course and felt it needed more sauce so he doubled it. I must say it was so flavorful and easy. The only thing I may do differently is add the garlic in with the green beans as they're stir frying, but this is one recipe we will do again and again!!
