Tuna Lime Tostadas

Made as directed on tostadas the first night, then the husband finished it off as a dip with tortilla chips the next day. This was okay, I like all the ingredients in the recipe, it just didn't seem like the tuna really meshed well.

Green Chili Tomato Soup

Made this to go along with our quesadillas tonight, but it just wasn't the one for us. I may have liked it a bit better after a whiz in the food processor to puree the green chilies, but I'm still not sure that would reconcile the two flavors for us. It's too bad because I had been looking forward to making this, but next time I do tomato soup, I'll stick with trusty basil as a sidekick.

Homemade Black Bean Veggie Burgers

These were super good! My husband, the self-proclaimed meat-atarian, even fought to take the leftovers to work for lunch the next day. I subbed red for green pepper in these, next time I'd like to try it with corn added as well. We made these burgers to go with the Tomato, Corn, and Avocado Salsa from this site for our weekly "LOST" viewing party.

Blue Cheese Chicken Wing Dip

Everyone love, love, LOVED this! I shredded 3 chicken breasts, used an entire bottle of Frank's and about 1/2 bottle of bleu cheese- anymore of the bleu cheese and my husband said it was overwhelming. I kept this in the crockpot for the Superbowl party and it was scooped up with Fritos.

Wow! These were pretty tasty, even making them with soy dogs as I did (silly vegetarian!) The husband's were made with "real" dogs and he really liked them as a snack.

These were chowed down at last year's Christmas party. Then I revealed the "secret ingredient" as being clams. My FIL reiterated his dislike of clams while still finishing his morsel. Actually a lot of people supposedly didn't like clams and yet the platter was still cleaned out!

Baked Onion Dip I

I made this when trying to get rid of several pounds of onions. I used 2 large sweet onions, which was probably more than called for, but it was still pretty good. I also subbed a cup of sour cream for one of the cups of mayo.

Beef Stew VI

I followed the recipe exactly, except I did dredge the beef in flour, pepper, salt, and paprika before browning; added T each of ketchup and Worcestershire and also a few dashes of liquid smoke. Husband said it tasted pretty good.

Roasted Garlic Cauliflower

My husband can be picky about vegetables (with meat he has no problems!) and he really liked this! I served it with peas, hamburger patties and brown gravy, and he made very certain that he got the leftovers packed for lunch. Delicious recipe!
