Incredibly Cheesy Turkey Meatloaf

This was absolutely delicious, and even the kids had seconds! My changes: I used shredded cheddar instead of cubed, and baked on a cookie sheet instead of a loaf pan. Turned out beautifully!

Black Bean and Corn Quesadillas

These were great! I folded them over to make them easier to flip, but they still turned out wonderfully. Just spicy enough, and great with sour cream and salsa!

Banana Peanut Butter Bread

A very good, dense bread. Smelled wonderful and tasted great, although I had to bake it for 20 minutes longer than the recipe said.

I omitted the green onions, because my hubby is allergic, but these turned out great! I'll definitely make them again. I thought they were especially good paired with sliced pineapple on a sandwich bun.
