Slow Cooker Taco Soup

We all loved it. Only thing I did different was black beans instead of kidney beans. It was great!

Salsa Chicken Rice Casserole

Good casserole. I used about half the cheese it called for, and I only used cheddar (that's what I had.) Whole family liked it... will make again.

Cottage Cheese Chicken Enchiladas

Pretty quick, and very good. Has just enough spice, but not too hot. I love that you get some extra healthy protein from the cottage cheese.

Tomato Pepper Steak

Black Bean and Corn Quesadillas

These were a wonderful healthy meal. I followed the recipe, just choosing ingredients to make it lite. I used spray butter to spray my skillet instead of regular, and I used high fiber tortillas. The sugar is minimal for the amount of beans and corn there is, but you could even cut that out if you wanted. I will be making these TONS for lunches and quick dinners!

Baked Chicken and Zucchini

The only thing I did different was to NOT saute the zucchini, but they still turned out too soft. I will need to slice them thicker next time. The chicken was moist, we enjoyed it.

Cheesy Potato and Corn Chowder

I followed the recipe except for two things I added an extra can of corn to make it bulkier, and I didn't have processed cheese so I used shredded. The chowder was good! My 3 and 5 year old liked it as well. Next time I will add bacon for more flavor, as others suggested.
