Surprise Muffins

Really tasty muffins. I didn't have a problem with the jam bubbling over and will add more to the centre the next time I make this recipe. I also added some cinnamon, dotted with jam and sprinkled flax on top.

Amazing and Thankyou so much. I only have a faint memory of this dish made by my great grandmother. Made for my grandfather a few weeks ago and he loved it. Make to sure to finely shred the potatoes so they cook well. Draining and pressing the soaked potatoes to collect the starch is key.

Shortbread Cookies III

This is the best shortbread recipe and correct proportion of ingredients - I omit the salt. I have been making this recipe at Christmas for years and they are the first cookie gone. Recently won "Best in Show" and first place at the local fairs. Good with a pecan in the middle or a marischino cherry and melted dark chocolate drizzled over top - "Black Forest Shortbread".

Strawberry Jam

Awesome and Easy! I used this recipe to make my first batch of jam, not a fan of pectin so this worked well. The berries I had picked were fairly sweet so I reduced the sugar to one cup. Thinking about making another batch and adding some peaches. Be sure to wait for the "tar pit" bubbles prior to pouring into jars.
