I am a full time Education Director at a local tutoring center and put in a ton of work and hours! When I get home, I want to relax and have a good meal with my fantastic husband.
My favorite things to cook
I enjoy spending time in the kitchen putting together a tedious dish on the weekends. . . it makes me feel like I'm putting quality time into my family too! However, during the week "quick and easy" does the trick! Some of my favorites dishes of all time include: Manicotti, Marinated and grilled pork chops, Chicken Pot Pie, and pizza.
My favorite family cooking traditions
My mother has passed down a wonderful Green Bean Casserole recipe that is a staple at every Thanksgiving and Christmas. I have slowly started taking over the responsibility for this dish, and it's a lot of fun to follow in her shoes.
My cooking triumphs
Developing my own versions of old family favorites. . . and having people actually prefer them! :)
My cooking tragedies
Not too long ago, after a very busy and stressful day at work, I came home to find we were nearly out of groceries. Yep, it was frozen pizza night. I opened the box, unwrapped the pizza and placed it on our baking stone. When I took it out of the oven 20 minutes later and began slicing it, I realized that I left the round cardboard underneath! Needless to say, my husband was not impressed. I was mortified! He didn't eat, while I struggled to get down soggy pizza.
