This is a fantastic recipe! I did not have muffin tins so used a 9" cake pan instead. Increased the cooking time by about 5 minutes and it came out great! My kids sell the muffin cake for their lemonade stand and people have come back each week asking for it! I also add 1 teaspoon of vanilla extract as well but everything else is the same.

This tastes like Summer! I put all of the ingredients into a large pot (the size you would cook spaghetti in). I blended the mango, orange juice and olive oil first with a hand blender, then added the rest of the ingredients and used the hand blender for that as well. If you want some texture, leave part of the ingredients out and stir in at the end. I opted to use cilantro and it tastes wonderful in the soup. I used pre-sliced mango from Costco and it saved alot of time. Definitely try this. It sounds strange but tastes delicious.

This is the cake people ask me to make for them when going to parties or having one. This is a very rich, dense, cake. I have made it differently adding chocolate ganache with raspberries or strawberries added to the top of the cake. I have also added orange zest into the cake or served it with a raspberry coulis to pour on top with whipped cream as well. To save time and cleaning, I do everything in one glass bowl. I heat the chocolate in the microwave and go from there. I also use parchment paper to line the bottom of the cake pan which makes it a little more easy to get out. If you have trouble getting the cake out of the pan, dip the pan into warm water and then try again. This cake is wonderful and everyone will rave.
