I set aside about 1/3 of batter and a hand full of spinach and blended them to make green batter. Then after putting the other 2/3 of the batter into the pan, I covered it with green batter and dropped cream cheese mixture (about 4-5 TBS cream cheese and heavy cream until it got to a runny consistency) and did the swirl with knife. It just added to the whole fun of this recipe!
