Awesome Roast Beef
Very good! I had a half can of tomato sauce leftover, so I added it to the crockpot--basically for color and slight flavor (it's only 4 oz). I also added potatoes, onions and carrots to the cooker. I used the liquid leftover to make a gravy. EXCELLENT! I would try browning/carmelizing the roast prior to putting in crockpot next time. I think it adds more color and holds my juices.

Mushroom and Swiss Chicken
Not what I was expecting at all, it was much better! The cheese really makes this dish! I didn't use olive oil, just a bit of Pam in the pan. The vinegar scared me, but it came out with the most wonderful flavor! It's a keeper!

All Protein Meatloaf
Couldn't tell it was low-carb! Made a few modifications and deleted all garlic salt/pepper and added half a raw diced onion. Topped with a small amount of ketchup mixed with chili powder to carry the flavor from the meat! GREAT DISH and definitly a keeper!
