This recipe is so easy and tastes like something you would order from an authentic italian restaraunt on the 'Hill' in St. Louis. The only change I've made is instead of using canned crab meat (because I can only find minced)I use the frozen imitation crab meat, and cut it up. It's sooo yummy!!

My husband does not like any other vegetables than potatoes, corn, green beans and peas. I made these muffins about a month ago and he said he liked them. I guess I didn't believe him until he handed me some zucchini out of our freezer this afternoon and said 'PLEASE??' These muffins are so easy and so moist. I didn't change a thing. I will always make a double batch when I make them because they just don't last very long!!

This is the first year we've gotten apples off our tree and I've been looking for apple recipes. These are the BEST apple muffins I've made. I didn't change a thing. Biting into one is paradise. They are so moist and I love the maple flavor with the apple and oats. Thank you for sharing this recipe!!
