Day-After-Thanksgiving Turkey Carcass Soup

Reviewed: Dec. 5, 2009
This is a great base recipe. I added a lot more variety with my vegetables and used a wild/longrain rice combo. I did have some trouble getting all the bones, but I suppose that comes with the territory.

Simple Time Pork Chops

Yummy, but kind of greasy with the bone in loins. Added several spices etc and melted the butter and mayo together as well. Will update about leftovers...

Balsamic Dijon Dipping Sauce

Use this as a marinade! I omitted the sugar (I have the opposite of a sweet tooth), added a Tb of butter, and used it to soak some boneless pork ribs. It was delicious.

This was perfect. I halved the recipe and added mushrooms and a dash of soy sauce and then enjoyed dinner. Thanks :)

Marlene's Hash Brown Supreme

Reviewed: Apr. 12, 2009
This was great but I had to use way more potatoes, which may have been because I used shredded instead of cubed. I omitted the green pepper, just because I didn't have any but in the end this was spectacular.

Meatloaf Muffins

These were a great base! But I did cream of asparagus, added garlic, followed the recipe, and added shredded parm because I'm a cheese addict :)

Creamy Swiss Chicken Casserole

I won't even go into how many changes I made just based on what I did and did not have on hand. Basically, this is a great idea that will turn out good even if you do make a bunch of changes and it's nice to have such a versatile dish.

Easy Bake Fish

Reviewed: Mar. 7, 2009
This was a very layered flavor, but I don't have much of a sweet tooth so I would cut down the honey next time. I made it with cod, cajun mustard and followed other advice and cooked it in foil for 25min at 350.

Golden Pork Chops

Used cream of onion (what I had on hand) and the recommendations of the reviewers and this was great. Would definitely use cream of mushroom next time, the onion was a little sweet, and served it over rice which was perfect.

Baked Scallops

This was good, definitely needed to go over rice though. I made it without the breadcrumbs, which might have served the same purpose as the rice.

Parmesan Chicken II

Reviewed: Jan. 29, 2009
This was definitely good. I only had a little ground parm, so I used shredded and it was still great. Per other suggestions, I used garlic salt, pepper, and whole wheat panko bread crumbs. This was quite easy, and good for leftovers too.

The only change I made was that they only had mini-pastry crusts at my store so i used them. No matter what, this recipe is amazing!

Broiled Tilapia Parmesan

This was very very good. I garlic salt, dried minced onion, and cilantro instead of basil, simply because it was more convenient for me. The entire idea of this dish shined through as a great comforting dish.

Stuffed and Baked Tomatoes

Reviewed: Jan. 19, 2009
This was very good. I did use the smaller tomatoes I had on hand. I took some people's advice and added mozzarella cheese tot he mix. Since I had more basil on hand I used that too, and a red pepper instead of green. Brown rice instead of white was just as good and all in all this was a great and adaptable recipe.

Aimee's Quick Chicken

Reviewed: Jan. 14, 2009
Good, but next time I will use a gentler cheese (I'm thinking Mozzarella). It was too much with the parm and mustard, this is a great idea, just needs a little comfort feeling to it. Thanks. UPDATE: cooked this on chicken tighs without cheese or bacon, (cajun instead of dijon mustard) and it was the best chicken I've had in a very long time!

Baked Asparagus with Balsamic Butter Sauce

Reviewed: Jan. 13, 2009
Intense but great flavor. I was rushed, so I melted the butter in the microwave then mixed in the other sauce ingredients. Next time I will heat the ingredients together so the sauce is one unit. UPDATE: used as leftovers with a baked chicken breast (garlic salt, pepper, oregano) and couldn't get enough!

Asparagus Medallions

Reviewed: Jan. 11, 2009
This was unique despite simple ingredients, I seasoned the pork (loin chops in my case) with salt and pepper and simmered for about 45-50min, longer than recommended but I used really low heat. Make sure you get the soup on all sides of the meat, I just had it on top and it was still good but I plan to do so next time. Excellent with brown rice.
