Avocado Feta Salsa

i added in way way way too much onion b/c i'm still a beginner and thought i could measure it with my "eye". yea, no. i put in half a red onion so don't do that! but i give it a 4 because you NEED more avocados. i used 3 and thought it could have been better with more.

Lemon Garlic Tilapia

this was very good. the lemon flavor was awesome. i didn't saute the garlic like others said and it wasn't that raw tasting. notice that the recipe says finely chopped... finely chop the garlic and you won't have to saute it b/c it will bake fine in the oven. i used fresh parsley cuz i had it for once. i give it a 4 because the timing was off. 20 minutes in and the sauce had burned (black) around the filets. the filets were still salvageable, so that was good. very good tasting though. i will make it again and again!

Delicious! I added 1/4 tsp paprika and 1/4 tsp garlic powder and it was excellent! i served with rice and baby carrots. :)

Brunch Scramble

Awesome! I used fresh mushrooms because I didn't have canned. I also didn't have chive so, that may make a difference. Too much salt for me, but that is an easy fix! This is a VERY quick meal. :)

Chicken Breasts with Balsamic Vinegar and Garlic

Made exactly as stated except I didn't use flour on the chicken. I wasn't impressed. Too much vinegar for me, and I don't like thyme so I will just substitute something else for it next time. Sauce is quite runny so maybe a bit of flour will make it thicker (since i omitted the flour on the chicken per previous reviews). Also, are you supposed to mince the garlic or just stick the whole clove in there? Eating a clove of garlic is not very appetizing, so next time, I'll mince it--provided that there'll be a next time.

Old Time Chicken Divan

Just made this. It tastes a little bland so next time, I'll definitely season the chicken and add a bit of garlic to the sauce. Also, there really is no point in boiling the broccoli beforehand. I used frozen broccoli florettes and they cooked just fine in the allotted time frame. If you boil the broccoli, you are cooking OUT all the benefits of the vegetable. Look at the lovely green water you are throwing away. That is were all the nutrients just went-the trash. Anyhow, I served with rice. Yummo with seasonings!

Cream of Mushroom Soup I

I wanted to follow this exactly, but I didn't have some ingredients so I had to substitute. Don't think it made a HUGE difference but here goes: used heavy cream instead of 1/2 and 1/2 but next time, I'll go for fat free 1/2 and 1/2. Also, i used white cooking wine instead of sherry because i didn't have sherry. And last but not least, I sauteed the onions before. Next time, I won't do that as it requires to add oil (unnecessary because you are blending up the stuff anyway!). Hubby gave it a 4.5. I give it a 4 because it was a bit thick for me. Next time, I'll just add more broth!

Ratatouille

Very good! i could not for the life of me fit everything in a 2quart casserole dish. :( so i left off one tomato. BIG MISTAKE! the bites with tomatoes were a billion times more flavorful than the rest. next time, i'll put it in a 9X13 in dish. I served it over pesto pasta (gave it some more flavor) and hubby said we could serve it to guests!....

I'm sure these would taste good but the cooking time is totally off, at least for my oven. I made it exactly as stated and left them in 22 min until my topping started to burn. the inside was still undercooked. That bit was pretty disgusting...

White Chocolate Raspberry Cheesecake

My cake cracked.. and it was a bit overcooked...and i baked for 55 min.. next time, i'll def do the waterbath thing and double the raspberries because it was too dry. I didn't have leftover sauce either!!!

Butternut Squash Soup

I followed it exactly except i roasted 2 squash at 375 for 45 minutes. Very tasty! Next time, I am cutting down the cream cheese because it was overpowering and kind of a weird taste... so next time just one package. Otherwise, very very good!

Pasta with Asparagus

i started this and then realized i didn't have some things, but finished up anyway... so, i didn't have linguini, so i used rigatoni. my asparagus was spoiled so i used canned spears, drained and did not cook them, just the mushrooms, broth and a minced garlic, some pepper and salt, cooked until done. added asparagus and heated them thru, mixed with drained rigatoni and topped with parmesan. it was still pretty good, and i think it would be better with fresh asparagus b/c it isn't mushy. hubby liked it.

Penne with Chicken and Asparagus

This was very good. I put a lot of seasonings so it won't be bland, but only used what was written in the recipe. I added mushrooms with the chicken so that was good. only fault... too dry. I don't like my pasta swimming in grease either, but this could use SOMETHING. not sure what goes with it though... this makes a lot of food! i didn't realize the recipe was for 8 so we have a lot of left overs. It barely fit in my 12" deep skillet. i had to be careful when mixing it... and even then things fell out :D next time, i'll half it. anyway, 4 *'s because it was a little too dry for me.

Stuffed Guinea Squash (Eggplant)

I thought this was pretty good. My husband gave it a "4.75". He's very punctual like that. I'd give it a 4 b/c it was good, just not the best. It's very filling. I could only eat half of a half. I added a minced garlic clove, some oregano, salt and pepper and cooked the shell longer, as recommended by others. Next time, I will put more garlic, and I'll put the cheese on top in the last 6/7 minutes of baking. Even ten minutes was too much in my oven... and btw, it's such a pain to scoop out the eggplant in the beginning. Blah... scooping and chopping took me like thirty minutes (but i'm a beginner).

Basic Crepes

Loved it. My favorite filling in the world is a mix with small curd cottage cheese and raspberry jam (or whatever). SO good. jam is too sweet for me, and the cottage cheese calms it down. Then, i put a bit of heavy whipping cream in the bottom of a baking dish, put rolled crepes in there side by side and put some more cream on top of them and then stick them in 375 oven for 20-30 minutes (careful not to burn them. if they dry out, put a little more cream). Be careful if you do this because the cream 'calms down' the jam too and then it tastes too bland. So if you do this, make the filling sweeter than you like and then it should be fine. These crepes were awesome though! my first attempt!

Salmon with Brown Sugar and Bourbon Glaze

first, i soaked the fillets in milk per other reviewers, and then gently pressed the sugar in the fillets, sprinkled the bourbon on top and let them rest for an hour or so (again, another reviewer's advise). i could not even eat it. it was waaaaaaaaaaay too sweet, and i usually LOVE sweet things. this was just too much. i really thought it would be better.

Creamy Rice Pudding

i cooked 3/4 cup of rice and that yielded about 3 cups of rice! so i ended up doubling the rest of it. mine didn't thicken well(i left it longer than 20 minutes after putting the milk because i had twice as much) and my eggs cooked. i suggest removing from heat after adding in the egg. i did not think it was as wonderful as the reviews say.

Brown Sugar Meatloaf

It was okay. Nothing out of the ordinary. I cut the sugar in half, mixed it with the ketchup and added a T of worcestire sauce and poured it on top of the loaf. Next time I will make it with the full sugar amount for comparison. My husband liked it though.
