Sloppy Joes II
So simple and so yummy. I made this for my 9yr old picky eater son and he loved it! I followed the recipe except that I omitted the bell pepper because no one in the family like them. The first night my son ate on a bun but the second night we just dipped tortilla corn chips into the meat mixture and now is a kid favorite!

Cabbage Soup II
This was fantastic and so easy! I was looking to use up some veggies left in the fridge. I had 4 red potatoes and 1 zucchini that I tossed in. I also through in a can of mushrooms w/ juice because we love mushrooms. Didn't use the parsley but used oregano instead and two bay leaves. The potatoes cooked down and thickened the broth. YUMMY!

Yam Soup
WONDERFUL SOUP! And so easy! The only things I changed was I omitted the onion powder because there was already onion in the recipe. I also used minced garlic instead of the powder as others had suggested. I cooked the rice seperate in chicken broth. Then followed the instuctions for boiling the yams (about 20 min. 40 min. would be too long.) Once yams were tender I added cooked rice. I was afraid that the rice would not get cooked and that is why I did it this way. It looked really good but I decided to use a potato smasher to "messy smash" some of the potatoes and leave some of them not smashed. The result was a thicker soup that was just WONDERFUL. I will make this again and again. Thanks!
