Pecan Pie III

Great taste and it looked great. But when I cut into it was not set all the way and it was a bit runny; I even added the flour/butter addition sggested by others. It was still great though- esp. for my first time!

Baked Chicken with Peaches

Amazing! This is really good and really simple. I made it with canned peaches and little cinnamon in addition to the recipe's spices. Also, I seasoned the chicken with crushed black pepper and garlic powder; I served it with rice.

Thai Chicken Curry in Coconut Milk

OMG! This was really good. I followed the instructions provided as far as cooking, but I added a bit of coriander, garlic and a whole large can of pineapple along with 1/4 cup of the juice with the cooking chicken and 1/4 cup of juice with the other ingredients. I also cooked lo mein noodles and added those in as well towards the very end. I used 2 tsps. of red curry paste and that was plenty spicy (I think the amount of curry paste should really depend on your personal taste) and used dried cilantro and probably more than the recipe but I like cilantro so... (I didn't really measure it, did it to taste.)

Cold Asparagus with Curry Dip

Serves as a good base - but I added a lot of other spices to make it taste better. Granted the curry powder I used wasn't the best or fresh so that might have something to do with it. I added fresh pressed garlic, paprika, salt and pepper. I also might use yogurt instead of mayo, but keep the sour cream.

Parmesan Chicken

Very good with additions. I added some yogurt to the whipped egg. To the batter I added a bith more cheese some cayenne powder, Italian seasoning, onion powder and rosemary. After I flattened the chicken I cut each (lengthwise) into two pieces, I find that it is easier to cover them this way and eating smaller portions is better for you anyway. I also melted some cheese on top of the chicken while it cooking in the pan. Great recipe and thanks for posting it!

Slow Cooker Chicken Curry with Quinoa

Really good. I enjoyed this meal with the additions of carrots instead of celery, cranraisins for color and tartness (put in just a few minutes before serving) and the additional spices of cumin, cinnamon and chili powder that another reviewer recommended. Also, for some texture, I didn't add the apples at the beginning but rather about half way through. I also used yogurt instead of milk. I served it with baked potatoes. The one thing that I don't like is that there seems to be more liquid left over than one may expect - but it still tastes really good and has some really unique and different flavor combos.

Beer Battered Chicken

Really good. Received rave reviews from my parents. I added some salt, pepper, southwest chiptole seasoning and a tad bit of fresh orange juice to the batter. Would be great batter for fresh fish as well. Great recipe!

Chicken Pita and Yogurt Casserole

Pretty good and basic. I added some sour cream and finely chopped onion to the yogurt mixture. I also suggest using only two cloves of garlic, three is a bit overwhelming. After placing the chicken in the baking dish, I added finely shredded cheese and baked the dish until the cheese was melted (about 10-15 minutes)and then put the mixture over the warmed dish. I did not use the beans or the nuts, but instead spread chopped peanuts over the top. Great!

Easy Slow Cooker Chicken

Good, added some garlic, pepper and sea salt. I also added some fresh mushrooms and tomato. I cubed the chicken instead of using large chunks. I don't really like cream of celery so maybe next time I will use another can of mushroom soup.

Spaghetti With Peanut Butter Sauce

Great pasta. I used the recipe ideas from several reviewers and used chicken broth instead of water. Also I doubled the sauce ingredients but only used 1 package (8 oz.) of lo mein noodles. I served it with sauted broccoli and tomatoes with peanuts and seasame chicken with mushrooms and onions. One plate filled me.

Orange Mango Chicken

Not what I was expecting but I liked it. I think I used too much thyme, and the sauce didn't thicken like it was supposed to so had to add a bit of cornstarch. Make sure that the mango used is completely ripe. Interesting taste - great if your tired of the same old chicken.

Grilled Peanut Chicken

Really really good. I had never really cooked on the grill before, besides basic hamburgers, so I tried with this recipe. I really liked it. The sauce was really thick so I wasn't sure how to spread it on, but I figured it out. I really like peanuts so I think next time I will use more peanut butter and thin the sauce down some.

Good. I personally didn't like them, but everyone I cooked them for did. I used the big stuffing-type mushrooms, since I wasn't sure which type (the recipe isn't really specific. Very easy to make.
