Pumpkin Fluff Dip

This is a treasure for diabetics or for dieting -- use sugar free instant pudding and sugar free Coolwhip. A fantastic dessert or snack as well.

Easy Tuna Casserole

The handiest tips I gathered from pouring through the reviews -- 2 cups uncooked macaroni = 3 cups cooked as called for; and, 1/2 soup can of milk made a great consistency. Excellent -- comfort dining at its finest!

Sweet Russian Cabbage Soup

Just fantastic. I browned the ground beef and onion before adding other ingredients. Adjusted the sweet sour to 1/4 c vinegar and 1/4 c brown sugar. Next time I'll sub a can of tomato soup for the 8 oz of tomato sauce which will give it a little more oomph. Also threw in 1 can of beef broth for good measure. Added some instant brown rice at the end (not my fav, but holds up really well in the soup)which was a great complement. The flavor was fantastic -- this is the def of comfort food. Immediately a classic.

Fried Cabbage and Egg Noodles

The very definition of comfort food!!! Sometimes I'll back off the butter (just a little) and make up the difference with olive oil. A little bit of smoked sausage in with cabbage really works too as a main course.

Mini Cheesecake Bites

As per Jessica's recommendation, I used phyllo dough minishells, crisped in the oven and then cooled. They present SO beautifully -- people went crazy for them. Actually, people are more likely to enjoy one (or more :) ) mini bites where they would say 'no, I shouldn't' to a slice of a big hummer cheesecake. Fantastic!! Thanks for a big keeper.

Chicken Spaghetti Salad

Great as written. Next time I think I'll pick up a package of coleslaw mix (shredded cabbage, carrots). How easy will that be! and it will up the vegetable ratio. Probably drop the soy sauce amt just a little too. Good warm, but also good at room temp - so, great for picnics. Thanks for the submission.

Veggie Delight on Garlic Bread

We loved it!! Added a vidalia onion to the mix. Took the baguette, sliced in thirds - then each in half lenthwise. Made a wonderful open sandwich. Also, used a drizzle of EVOO instead of butter on the bread. Once assembled added a little shredded Parmesan over the veggies. Fantastic.

Apricot Sausages

Even simpler -- use ready cooked sausages. I slice on the diagonal (for looks) and place in casserole with dollops of apple jelly or whatever is on hand. Heat through in oven -- glazes beautifully. Goes fast!!!

Pasta Con Sarde (Pasta with Sardines)

Just excellent. Light and healthy -- we just tossed the pasta into the sauce, giving it a quick turn - so the extra oil wasn't needed. Added the parsley and parmesean as a sprinkle on top. Recommended!

Grilled Cheese Sandwich

A timeless classic. One tip I learned along the way -- a book recommended shredding the cheese(s), instead of slicing. You get a better melt. Not necessary, but a thoughtful suggestion.

Cranberry Dip

I have always loved cranberry sauce and never thought to do this. I'll use orange marmalade which is a wonderful complement to the cranberries. Super!

My Canadian Friend's Bean Soup

As good as it sounds!! I went ahead and just added an extra can of beans and an extra can of broth. The other proportions will still fine -- just made it go a little further since we were all looking for more!
