Asparagus Cashew Rice Pilaf

This recipe was enjoyable. I thought it was very easy to make. I broiled the asparagus and the cashews. To cook the rice, I used 1 cup of veg. broth and 1 cup water. I also used half the amount of butter called for and it came out perfect. I will definitely make this again!

Vegetable Filo Pie

Overall I thought this was a really good recipe. I used red and yellow peppers, onions, broccoli, zucchini and squash. The only suggestion I would make would be to add an extra sheet of phyllo dough to the top once you have folded all the sides up. Other than that, the recipe was awesome!

This was a very surprising dish. I thought it was going to be plain, but the cinnamon really added to the flavor. I changed the recipe a bit and cooked tofu with the onions and garlic in the beginning. I also salted the eggplant and let it drain in a strainer about an hour before I cooked it. That helped with the bitterness. I can't wait to make it again!

Orzo with Tomato and Fried Tofu

This was a great, easy dish that I made with a few changes. First, I used canned diced tomatoes instead of regular. I felt as if there was more juice to work with. Then, I used about a cup and 1/4 of pasta. There was still a lot - I could have gotten away with only using a cup. But I liked the flavors - didn't think it was bland like other people say. Just be sure to use lots of basil - it complements the flavors nicely!

Green Bean Artichoke Casserole

This was a wonderful casserole but I made a few changes. I used frozen green beans because I really don't like them canned. I also used about half of the cheese that is called for, and half of the bread crumbs. It came out moist and crunchy and good! It is very "heavy" if you will, and a person can only eat so much before getting stuffed. Thanks for a good recipe.
