Fra Diavolo Sauce With Pasta

Reviewed: Aug. 16, 2009
I preferred using fettuccine noodles since I find the texture to suit the dish better. May want to add more of a quick to the flavor with some red bell pepper or any other ingredient to give it more depth as I found the flavor a bit bland.

Pork Dumplings

I would try finding a wonton/dumpling skin recipe as using wonton wrappers were a bit too thin. You can also try using two sheets of wrapper instead.

I used canned whole tomatoes and completely recommend that! Try serving with plantains or plantain chips!

Curried Cashew, Pear, and Grape Salad

Reviewed: May 16, 2009
What a unique salad! I toasted the cashews in the oven at 350 spraying Pam on it first and sprinkling them with curry and chili powder to give them an extra kick. I also added craisins, feta and had some fresh corn (sliced from the cob)to sprinkle on as well. Awesome!

Russian Mushroom and Potato Soup

It was a solid soup. Great creaminess! I actually expected more of a punch from the dill and a complex flavor but it wasn't so. I substituted red potatoes for regular potatoes and it was great!

Cioppino

Reviewed: Mar. 14, 2009
A great aroma! I actually had to leave half way while cooking so I sauteed the onions and threw everything else in the crockpot on low to simmer for about 2 hours. When I came back, it smelled delicious! Next time I may used tomato paste instead of crushed tomatoes since I thought the soup was too watery.

Mama D's Italian Bread

I put a pan of water on the bottom while baking. The crust was crisp and the inside was deliciously soft! I served with olive oil mixed some dried oregano, thyme, and rosemary, alternatively you can also just use Italian seasoning.

Great and easy dish for the summer or spring! I didn't have fresh oregano so I just used dried oregano. Next time I may add a few other veggies like corn corn or chickpeas.
