I think the name "cookies" is deceiving. These are more like baked oatmeal bars than the warm, gooey cookies you expect. I substituted applesauce as well, and added 1/4 tsp cinnamon, a dash of nutmeg, craisins, chopped apples, and a couple tbl of agave nectar to help sweeten. The kids weren't fooled into eating these, but I enjoyed them as a healthy alternative!
