Eggplant Supper Soup
Wow, loved it, and it's a perfect family favorite meal that's also healthy and doesn't take too long to make! Will definitely add this to our list of regulars. I did 2-3x the amount of macaroni to make it a complete meal.

Fresh Broccoli Salad
Definitely not the best version of this recipe. Next time I will reduce the sugar to 1/3C or even 1/4. It was as sweet as a dessert. I think it would also be ok w/ 3/4C of mayo since I'm not the biggest mayo fan.

Quiche Lorraine I
It was VERY yummy, BUT I had to cook it at 300 for over an hour for it to firm, and that was after decreasing the liquid to 1.5 cups. My favorite recipe has been Basic Quiche by Shelly and I will be sticking with that recipe instead.
