Jacky's Fruit and Yogurt Muffins

First off, these were HUGE! Which is definitely a good thing. I loaded the batter into 12 muffin cups (and I do mean LOADED) because I can't stand having to use only part of a muffin tin for a recipe (personal pet peeve). I subbed whole wheat flour and used a fat-free, organic french vanilla yogurt and fresh blueberries. These are a huge hit, and the best part, with only one egg in them, I can eat them too!

Chipotle Peach Salsa with Cilantro

I made this as a last minute topping for some black bean burgers I was making, and I really enjoyed it. I had to modify it a bit to use what I had on hand. I added 1/2 a yellow bell pepper and tomato. Left out the chipotle peppers (didn't have them) but subbed with a chipotle hot sauce. Left out the cilantro and added cumin. Left out the ginger and used some cinnamon instead. I also added some sugar to counter balance the potent onions I used. This went perfectly with my burgers and I can't wait to make it again with all the intended ingredients.

Homemade Black Bean Veggie Burgers

Next time I make these I intend on making some changes based on a couple of difficulties I experienced. I had absolutely no problem forming the patties even though I left out the egg (I'm allergic). I thought the consistency of the mixture was perfect, not at all sticky and quite similar to turkey burgers I've made in the past. However, I had a hard time keeping them from falling apart during cooking (I baked them unfrozen and frozen) and had to keep reforming them during the cooking process. I also found these to be quite dry(could be because I left out the egg?) and not substantial enough for a burger. Otherwise, I loved the taste of them and thought the spice was perfect! I melted some cheddar on them and served with a modified version of the "Chipotle Peach Salsa with Cilantro."

Actually Delicious Turkey Burgers

These were good, but I also "enhanced" them for some flavor. I added some beef bouillon and a splash of soy sauce. I also upped the garlic and onion. I served with spinach, feta, tomato and avocado. They were tasty but I wouldn't go as far as to say they would replace regular burgers in my house, especially because they took FOREVER to cook.

Pork with Peach and Black Bean Salsa

This was a good recipe and I would make it again, however I felt it lacked spice (which I guess could be a result of the chosen salsa). I will try it with some fresh jalapenos or other spicy peppers next time. I did omit the corn meal, used leftover "Grecian Pork Tenderloin" and switched out the beer with chicken broth (I forgot we had drank it all. Whoops!). Very good served over brown rice.

Grecian Pork Tenderloin

I really enjoyed this. I love the citrus taste and the seasoning was good (I did cut back a little). I had to use bottled lime juice since I neglected to pick up limes (oops!). Very moist and delicious!

Honey Roasted Red Potatoes

I had to mix up this recipe a bit. I left out the dry mustard and used some cayenne pepper in its place. I also substituted chicken broth for the melted butter. I added a little bit extra honey. The cook time on these actually took over an hour even though I had cut the potatoes into eighths. The honey was very yummy and I enjoyed these.

Chicken Encilantrada

This was yummy. I love the fresh cilantro, which is something I rarely ever use. I added some garlic cloves and cumin, otherwise I kept everything the same. I had no problems with it being "soupy" since I let it set for a bit longer than instructed. I used this mixture for burritos and it was very satisfying. I'm thinking of using the leftovers in a salad for lunch.

Chocolate Chip Coffee Cookies

By far, the BEST chocolate chip cookies I've ever made. I never would have thought to add cinnamon, but it's delicious. I barely noticed the coffee flavor, but still really enjoyed these. I'm thinking of adding walnuts next time. I upped the amount of liqueur by a tablespoon (for a total of four) and added a smidgen more flour to compensate for the extra moisture. Can't wait to make these again and experiment with different flavorings! UPDATE: I made these again and halved the cinnamon, which we enjoyed more than with the suggested amount.

Zesty Potato-Ham Casserole

A good, quick recipe for using up leftovers. I'm not sure where the "zesty" comes into this recipe; I felt it was a tad bland. I left out the tomato and used red peppers to add some more color. I also added thyme and garlic.

Caramelized Onions on the Grill

These onions were good, but a bit salty, of course that has more to do with the bouillon I used than the recipe. I cooked the onions on a small baking sheet, covered in foil, over the grill. They caramelized perfectly! I think the pictures accompanying this recipe are very misleading because these onions don't turn out at all like the pics if made correctly (they come out better!). I will definitely make these again but I'd like to cut down on the salt.

Ukrainian Apple Cake (Yabluchnyk)

This did not turn out well at all (however it was very pretty). I followed the recipe exactly and ended up with a VERY dry cake that tasted like baking powder and was still raw underneath the apples. I didn't use all four apples (I used 2 1/2), and I'm glad I didn't because I can't imagine how watery it would have ended up if I had. My boyfriend ate a couple of pieces.

Chicken Avocado Pizza

This was very good! My boyfriend LOVED it! I used a pre-made crust in a tube and cooked it on the grill. Yum! I skipped the food processor (don't have one) and just mashed everything with a fork. My boyfriend loves garlic, so we didn't mind the bigger pieces. Also, I skipped the rubbing garlic on the crust step and just used a garlic infused olive oil. Can't wait to make it again!

Zucchini Boats on the Grill

These were delicious!! I took the suggestions of others and microwaved the zucchini as well as removing the liquid from the pulp. I also made little tinfoil boats and grilled them open, which gave them a nice crispy top. I sprinkled a little Parmesan cheese on top immediately after I took them off the grill. I omitted a lot of the ingredients, because I didn't have much of it on hand (olives, bacon bits and the peppers), so maybe it's not fair to give this recipe 5 stars, but there's no doubt in my mind it would have been just as tasty had I followed the exact recipe. Can't wait to make them again! UPDATE: I make these ALL the time and I change up the ingredients each time and they're ALWAYS delicious. Tonight I used red onions and diced jalapenos and we put a dollop of sour cream on top. This is now my favorite go-to, light, grilled dinner (I treat these as a meal for two rather than a side).

Pizza On The Grill II

My rating is SOLELY for the directions of this recipe. Absolutely DO NOT set your grill to high heat when making this pizza. On my first attempt I did, and my crust was burnt within 2 minutes and had to be tossed. That being said, I dropped the temp of the grill to low and tried again, and the crust came out perfectly.

Pear Walnut Chicken

I LOVE this recipe! I too used fresh pears instead of canned. I actually discovered an apple and pear flavored vitamin water that I used in place of the pear and apple juice. Delicious! I used a a reduced sodium soy sauce, garlic olive oil instead of vegetable, omitted the parsley and walnuts (didn't have either) and used flour in place of the cornstarch. Too soften up the pears, I simmered them with the chicken mixture. So very tasty. I will definitely make this again!

Maple Carrot Cupcakes

I'm kind of up in the air on this one. I've had better carrot cupcakes, and I didn't really notice the maple in these. They stuck horribly to the paper liners, but surprisingly the cupcakes were still moist inside, but almost undercooked. I substituted applesauce for the oil, but otherwise didn't change anything. Since I didn't have the ingredients for the frosting, I used a container of vanilla frosting and added some maple flavoring, which, in my opinion, was the best part. On the other hand, my boyfriend really liked these, and I guess that's all that matters, since he'll be the one eating them!
