Beer Margaritas

Not bad actually. I'm not sure if I would make it again, but i would gladly accept a glass this summer from a neighbor and enjoy it. Hint, Hint!

My wife hates me for making this recipe! She wants carbohydrates like a cat wants a bath. She cant stop herself from dishing some onto her plate and going for seconds. I have been searching for a scoopable corn cake recipe since having it as a side at Chevy's resturant. This is as good or better! I am not a big cornbread fan, but this has been conjured from heaven. I tried to find a small bag of masa harina since this is the only recipe I have that calls for it. I could only find a big sack at Aldi's. After making it, I'm glad I got the big sack. I did not alter this recipe at all. It is perfect. I will alter it in the future though. I need to make a bigger batch. The 3rd time I made it, I forgot to add water. It still turned out delicious.

Whit's Chicken Enchiladas

This recipe is awsome. super easy and an instant favorite for the entire family. I made it by the book (did use canned chicken) and won't be changing a thing. They are very rich but very good.

Baked Corn

Good recipe. We all liked it alot. I was looking for a sweeter, creamier spoon bread. The kernals were too identifiable. Next time I will try adding sugar or honey. And putting the two types of corn in a blender.

Mexican Rice II

I was surprised how really good this was; being so quick and simple to make. My 14 yr old picky eater made it by herself exactly per the recipe. She isn't known to be a rice eater at all. She doesn't cook normally either but got grounded by mom and favored me that evening. She ate 3 helpings. This will be a staple for mexican meals at our house.

Taco Seasoning I

It has a nice spiciness to it. Not too much at all. My family and I like it. I do feel like it needs a little something else. Using homemade spice mixes has the great advantage of keeping your stock of spices fresh. Also you it allows you to get to know your spices better, thus giving you insight to improvize more successfully through personal experience. I will use this recipe again.

Baked Asparagus with Balsamic Butter Sauce

Boy did I need this recipe! So quick and simple. I misread tablespoon for both vinegar and soy. It was great. This recipe is so good , you just cant screw it up. I will try it out on my picky eater, ie wife.

Chocolate Chip Bread I

I thaught I would outsmart the melted chip problem by freezing the chips prior to adding them to the bread maker Add Cycle. It didn't work, and I ended up with chocolate bread.

Caramel Popcorn

Awsome popcorn. The best I have ever had I made it into Cinnabon Clone Caramel Popcorn: Use the recipe as stated but with twice the popcorn and 1/2 the butter. Make the frosted coating: Melt 6 cubes of white bark in small non-stick sauce pan set on low. When melted stir in 2 tsp ground cinnamon. After popcorn is removed from the oven/cooled/and broken apart, place wax paper on counter with popcorn spread out in a single layer. Frost with melted bark using a wooden skewer or chop stick, dipping into pan and shaking over popcorn. let dry and enjoy
