Kona Chicken

I made in slow cooker exactly as directed, with these changes: * added fresh grated ginger * added garlic (2-3 tsp) * added 1 tbs chili paste * Used 2 lbs boneless chicken breasts cut into strips. served over white rice next time I'll add add mushrooms, maybe carrots and/or green beans. Very tasty and very easy!

Baked Scallops

Had a nice flavor, but were mushy even with 5 minutes broiled after bake time. Next time I will try to broil longer - served w/ a salad, but would be good over rice. *Added red pepper flakes - otherwise followed recipe exactly

Asian Lettuce Wraps

This is delicious and easy to prepare - chop your ingredients in advance. Changes I made: 1. Substituted ground turkey 2. Added shredded carrots to the'sauce'mixture 3. added cilantro to the meat after cooking 4. Made with the "Oriental Dipping Sauce" on this site

Spinach Salad With Berries and Curry Dressing

This makes a great meal! Very tasty.... Changes I made: - Replaced Rice Vinegar w/ Olive Oil (dressing is still a little bit more "vinegary" than I would have prefered) - added avocado - used sliced almonds instead of pecans

Poor Man's Caviar

This is excellent and quick to fix!! I added: *Lime juice of 1 lime (also helps the avacado's not to turn brown as leftovers) *Cilantro *Used Olive Oil instead *Left out the hot sauce b/c I wanted it to be more like a guacamole - but would be great either way.

Sweet Potato Enchiladas

This recipe is delicious! Changes I made: * Added about 5 cooked/shredded chicken breasts, additional green onion and chopped cilantro. * Used a green enchilada sauce in place of the red sauce. * Tripled (or more) the seasonings * Used a hand-mixer to blend well before filling the tortillas

Oatmeal Baked Chicken

Made as recipe suggests, except used boneless/skinless chk breast cut into strips & cooked for 35 min at suggested temp. Also, added about 1 tbsp honey to soy milk to help coating stick. Delicious and easy recipe!

Oat Applesauce Muffins

These are delicious & healthy. Changes: Used egg beaters in place of the egg Used quick cooking oats, but still soaked them 2 hours. Chopped up 1 cup of a peeled apple & drizzled with honey - let sit while oats soaked (added extra moisture & sweetness) baked about 13 minutes.

Creamy Chicken Peanut Soup

I took another reviewers advice and made with coconut milk in place of cream & added curry paste for heat, but still wasn't very spicy - might use real peppers next time. Also added chicken & would be good with carrots. Was excellent with cilantro as a garnish!
