Chocolate Frosting II
I just realized that I was supposed to do the mixing in the saucepan on the stove! I didn't do that - I microwaved the butter and then mixed it all in a bowl. And it's really good, except it's a bit too vanilla-flavoured. I used a hair under a tablespoon (ran out) but would probably use 2 tsp next time and see how that works.

Classic Bran Muffins
I replaced the oil with a single-serving cup of strawberry applesauce (1/3 cup) and the milk with 1 tbsp lemon juice and enough milk to make one cup. They're delicious! SO moist, they rose really well, and there's just a hint of fruit flavour from the applesauce. Really subtle but so good. I'll be making these a LOT.

Light Oat Bread
I've made this so many times now and it turns out perfectly each time. I follow the written recipe except I use only 2.5 cups of white flour and 0.5 cups of whole wheat. I do it on the light crust setting and it comes out beautifully golden but still with a reasonably soft crust. By far my favourite bread recipe!
