I never really cooked until I finally got the stove working at my home in Denver - but I promptly deployed overseas without getting to do too much. Now that I'm in Germany, I enjoy seeing what I can do with limited space and supplies. I'm always surprising myself!
My favorite things to cook
I've just started baking (within the last 3 weeks) and am finding that I really enjoy it. I also like cooking a lot of vegetarian dishes - although I'm not a vegetarian - to explore all the different vegetable and grain possibilities.

Amazingly Easy Irish Soda Bread
Really good, especially right out of the oven with some butter. I had to substitute fat free yogurt for the buttermilk because that's what I had and I wonder if that wasn't what contributed to a slightly thicker bottom. I followed other reviewer's suggestions and turned the heat down and cooked for almost one hour. It turned out perfectly done.

Sweet Potato Bread II
First, I halved the recipe. Substitutions made include: 1 cup whole wheat and 3/4 cup all-purpose, 1/2 cup applesauce for the oil, 1 egg-beater cup instead of two eggs, and used 1/2 cup splenda/sugar baking mix instead of all the sugar. Also added dried cranberries and did not peel the sweet potatoes. It turned out wonderfully, at just one hour exactly. A little oatmeal and sugar sprinkled on top, beautiful!
