Pasta with Greens N Beans
Quick, tasty and healthy! I added the escarole to the boiling pasta the last few minutes of cooking time instead of sauteeing with the sausage. Also, I reserved a cup of the cooking water once I drained it and added it to the mixture at the end. Cooked parsley- cheese sausage in some olive oil and then added a can of diced tomatoes along with the beans for added flavor. Sprinked in some freshly grated asiago cheese and then combined all with the pasta and escarole. Added extra cheese at the end - yum!
