Breakfast Casserole I

We doubled the bacon and broccoli. It turned out really well for Christmas breakfast. It's nice to be able to get it ready the day before and just pop it into the oven before all the Christmas morning festivities.

Raspberry Ribbons

This is a nice change of pace and it does look pretty on the plate. I substituted strawberry jam and drizzled chocolate syrup instead of the white glaze. This is a versatile cookie that can be adapted to lots of different flavors. Delicious.

Pork Medallions with Sauteed Apples

We loved this. I sauteed instead of broiled, added mushrooms just because I had some left over and neeed to use them up and used half a yellow onions because I didn't have green onions. Really good, lots of flavor and pretty quick for a week night dinner. It has been requested that I make it again soon.

Fish Fillets with Stuffing

I loved the flavor and crunch of the stuffing. I also baked the fish instead of microwaving it. I think I might bake the stuffing for a few minutes separately, then add it to the fish and broil the whole thing. It's a great recipe and I think it will be fun to experiment with it.

Old-Fashioned Italian Zucchini Fritters

Very tasty. I cut the recipe in half and it was plenty to feed a family of 4. I added a little more parmesan (but will probably add even more next time)and used dried basil because that's what I had on hand. We dipped them in ranch dressing and/or soy sauce. Thanks!

Pan Fried Halibut Steak with Light Green Sauce

My family really liked this. It was easy, quick and attractive. The sauce was tasty but did not overpower the fish. My only change was to add a bit of garlic during the sauteeing of the fish. We will make this again!

Simply outstanding - easy, moist, delicious and healthy. Who could ask for more? Our only changes were a tiny sprinkling of Tony Chacheres for a bit of heat, and no green peppers. We loved it and will make again soon.

Belles Hamburger Buns

These were very good. I also substituted bread flour for AP flour. The only problem I had was that they stuck to the parchment paper. Next time I will try just greasing a cookie sheet. Will definitely make again.

Amy's Garlic Egg Chicken

Not that this needs another review, but wow - this was really good. The whole family loved it. Followed other reviewers' advice about cutting back the breading amounts by half and that was just right for 4 breasts. It was easy enough for my 13 y.o. to make. She loved getting the raves from her brothers and dad for a great meal. Thanks!
