We were at the Houston BBQ Cook-off - February 2009

My husband and I love to cook. I try at least 3 new recipes a week. We have a two-year-old little boy that would rather eat off of our plates than his own. I do most of the cooking and baking in the kitchen and my husband mainly does all the grilling. We love hanging out at the house and cooking for friends to come over and enjoy!
I wouldn't call myself an Expert in the kitchen. I guess I could be called an Expert at Experimenting. I'll try anything once!

Simple Mexican Rice
I thought this was a easy and yummy recipe. I used instant rice and doubled it for left overs. Will definitely make again!

Kentucky Butter Cake
This was a very moist and rich cake. I followed the recipe for the most part...I used regular milk instead of buttermilk. I also used Country Crock Light butter since the recipe does call for quite a bit of butter. I took the advice of another reviewer and doubled the sauce recipe and used half of it for a topping. I also used a microwaveable bowl with a pouring spout to heat up the sauce ingredients. It was a lot less clean up than using a saucepan. Yummy! Will fix again!

Beef Enchiladas I
Yummy! I didn't use all the green chilis and I added in some Monterrey Jack cheese with the cheddar. We like our enchiladas saucy so I also added a can of regular enchilada sauce to the mix. Will definietly fix again!
