Texas Caviar with Avocado

My family liked this recipe a lot. I may go a little lighter on the Italian dressing next time. I don't think it needed the entire 8 oz. I also don't do so well with the hot peppers, so I went for a milder poblano. Thanks so much for sharing! I would have never thought to use black-eyed peas in a dip like this, but they were great!!!

Italian Grilled Cheese Sandwiches

Really yummy! We put fresh basil and thin tomato slices on ours as well, and they were soooo good! I just popped mine in the skillet til' they were browned on both sides- a quick and easy lunch! Thanks for sharing!!!

Croutons

I've been making these for years! They are great when you don't want your bread to waste, but it's not quite sandwich material. I just use a soft spreadable butter, like country crock, and then I form mine into balls so they are a bit chewy in the middle. That's just me though! Love them either way!

Real New Orleans Style BBQ Shrimp

This was awesome! It was seriously sooooooo good! My husband couldn't wait to eat because it smelled so good! I paired it with mashed potatoes as another reviewer suggested! Next time I will use more creole seasoning and about a stick less butter! (I cut the recipe in half for our family) Update: we made the most AWESOME white pizza with the leftover Shrimp. It was the best ever!

Sweet Dinner Rolls

These are the best! I made them in the clover leaf style someone else suggested, and they were not only really really yummy, but also pretty! I put honey butter on them! Also- the suggestion to use 2 and 1/2 tsp. for bread machine yeast was exactly right! On my breadmaker- I used the pizza dough/dough cycle for a 2 lb. loaf, and it took about 1 hr and 40 minutes.

Homemade Black Bean Veggie Burgers

I made this recipe two times. The first time, 3 cloves of garlic was a little too much for me- so I tried with just one clove the next time! I also added a little bit of corn and I chopped up some fresh spinach and added that as well. Oh- and I also added a little brown rice! I was so excited to have such a HUGE burger, and it is actually healthy for me!! Now when my Hubby eats his meaty burgers, I eat my black bean burgers!!! (I freeze the rest and use when I don't feel like cooking!!) Thanks for sharing this great recipe!!

Banana Sour Cream Bread

I love this recipe!!! My husband says it's the best banana bread he's ever had!!! I made just a few changes, although I am sure it would have been perfect the other way as well! I used 8 oz. fat free sour cream and 8 oz. light sour cream. I also used 1 cup white sugar, 1 cup brown sugar, and 1 cup Splenda. I added a dash of nutmeg as suggested by another reviewer. I split between 3 pans- since that is what I had. Baked at 320 degrees, and checked after 45 min. One of them was already done, so keep an eye on it!! I also covered with tin foil, as another reviewer suggested, towards the end of the time, so it was not to dark. I love this bread! It is wonderful!! Thank you!!!

Connie's Zucchini "Crab" Cakes

For some reason, I decided to add the flour into the mixture, rather than just lightly coating the outside- ooops! I don't fry food very often! I realized what I did right after, but it was too late! So I cannot give a proper star rating until I try this recipe again (I'll just assume it would have been much better without my mistake)- just thought I might try to prevent anyone else from making the same mistake!!!

It's fantastic! I am so happy to have this recipe! It is addictive!! I used fresh rosemary- dipped in olive oil with italian seasoning, salt, and cracked black pepper. Would be good with roasted garlic in olive oil, too!!

Zucchini Souffle

This was a great recipe! I made it my own... using spinach and squash as well. I steamed the zucchini, squash, and onions for a few minutes before adding it to the mix so that I could cut down on the cooking time. I also used applesauce instead of oil (to make it healthier) and baked it an a 9x9 dish to make it thicker. It was excellent. You just need to spice it up the way you like it- make it your own- but thank you for the recipe! It was a great dish and not very difficult!

Easy Key Lime Pie I

This was wonderful! I made it for my boyfriend, and he loved it so much he asked me to make another. He took it to his parents and they loved it too! It is soooo easy to make and it tastes great! I never liked key lime pies until now!
