My favorite things to cook
My specialty is cakes and desserts. I can jam all day and night baking and decorating cakes. Fun, fun! I also like to explore kid friendly meals and love the heck outta my slow-cooker.
My favorite family cooking traditions
My kids get to design their own birthday cakes as well as choose whatever they want for their birthday dinner. We have a lot of fun with this and they've been known to go a little crazy!
My cooking triumphs
A three tier cake with eight satellite cakes, each with lace chocolate overlays. I also won a county contest once and they put my winning cake in a clear box in the middle of a mall.. wild!
My cooking tragedies
Oh boy, finding the toddler sitting on the dining room table eating the giant baby shower cake due to be delivered in less than an hour. I have also accidently swapped salt for sugar and burned things to a toasty black crisp! The best though, was catching the oven on fire on Thanksgiving and having the firefighters save the day (but not the dinner!) :)

Beef Nacho Casserole
A great classic to cook for the family. Easy to memorize, ingredients are always on hand, and everyone loves it! My only modifications were using 1 1/2 cups of sour cream and 2 T of mayo (instead of all mayo) and I also threw in a can of black beans. This is really good comfort food and the kids say they like it even better than tacos!

Green Punch
We made this for St. Patty's Day and everyone loved it! Yummy lime carbonated punch! Will make again for an adult Halloween party with a little bit of adult spirits thrown in! ;-)

Hudson's Baked Tilapia with Dill Sauce
Glad I stumbled on this recipe! The cajun seasoning pairs oh so nice with the dill sauce. Excellent flavors working here! I fried the tilapia in olive oil and 1Tbs of butter instead of baking and it was fantastic, juicy, and flaky. The Man and the 4 Kids raved and scarfed all seven filets! No leftovers here.
