Pumpkin Cake II

This was so easy and delicious! I usually fail miserably at homemade cake, but this came out BEAUTIFUL! And soooo yummy! I did subsitute 1 cup of applesauce for 1 cup of the oil. I drizzled it with cream cheese frosting and sprinkled on chopped pecans rather than baking in the walnuts. So delicious!

Creole Black-Eyed Peas and Rice

This was easy and delicious, but the second time I made it I turned it into a casserole. I browned the ground meat with a dash of worchesteshire sauce. The hubby doesn't like the onion and pepper "bits" so I subsituted with seasonings. I took the ground beef, the two cans of peas, one can of cream of chicken soup, 3/4 cup water, the rice, and 1tbsp creole seasoning, 1 tbsp onion powder, garlic powder (we like a lot of garlic) and a dash of cayenne pepper and mixed it all up together in a bowl. Spread the mixture into a 9x13 baking dish and baked it at 350 F for about 30 minutes. Then sprinkled a bit of cheddar cheese on top and covered with foil to let the cheese melt and the casserole set up. It was yummy! Thanks for the great Recipe!

Todd's Famous Blueberry Pancakes

Thanks Tricia, this is just what I was looking for. Served these for breakfast in honor of Fourth of July with some blueberry syrup and they were DELICIOUS! I usually keep the leftovers for re-heating during the week in place of frozen storebought pancakes and waffles, but there was nothing left!

Cowboy Oatmeal Cookies

These were the best oatmeal cookies that I've ever made. I did follow other users' advice and add an extra cup of oats and 1 tsp of vanilla. I also used 1/2 cup of applesauce in place of the oil and used chocolate chips instead of butterscotch because I didn't have the butterscotch. Usually when I attempt oatmeal cookies they spread and don't turn out at all like I want, but these were really easy and came out awesome! This is a great oatmeal cookie base that I look forward to using again and again!

Sweet, Sticky and Spicy Chicken

This was really quick and awesome! I only used 1 tbsp of hot sauce and it was plenty spicy enough for my tastes.. but I guess it can really depend on the brand of hot sauce you are using too. I also added some carrot strips which paired really well with the sweet-n-spicy gingery sauce. Will definitely make again!

Sloppy Joe Sandwiches

These Sloppy Joes were *PERFECT* for my family. My husband hates the "bits" (i.e.-onion and bell pepper chunks) that I usually enjoy, but loves the flavor they bring. This way we can both enjoy these! I doubled the recipe for my family and Hubby went back for seconds! Excellent!

Banana Pancakes I

These were awesome pancakes! I added the vanilla like several other vanilla's and then tossed in some chopped walnuts and a couple of chocolate chips into each pancake too. DELICIOUS!

Lasagna Roll Ups

I'm giving this recipe only 4 stars because I used other reviewer's adjustments to get more flavor. I added a palm full of Italian seasoning, some onion powder and some minced garlic to the cheese mixture and added ground beef to the sauce (I used a homemade spaghetti sauce). It was DELICIOUS and made a ton! The left overs were just as yummy. So, great starter recipe, but a little bland on its own. Just needed a bit of pizazz.

I am currently 6 months pregnant and have been craving some ultra-yummy chocolate chip cookies and these *definitely* lived up to the name. I made mine with packed dark brown sugar and used m&m's candies in place of the chocolate chips. I also made my cookies a little bit smaller... but all adjustments taken into account, these were still the most awesome cookies I've ever eaten. I will be saving this recipe to use again and again. Thanks for satisfying my pregger's craving, Felix K!

Brownie Biscotti

This recipe came out tasting wonderful! I added 1/4 tsp of orange extract and left out the nuts since I was making it for a friend who doesn't eat them. I read the reviews before baking and lowered the baking temps and time. 350 for 20 minutes for the first bake, and 300 for 12 minutes for the second. I also had trouble with crumbling pieces when I started cutting with a serated knife, and it was my best bread knife too. But after three or four pieces, I switched to a sharp chopping knife and it worked like a charm! No more crumbling! I drizzled the finished pieces with a little bit of white chocolate and they came out beautiful! I will make this again!

Amish White Bread

This bread was truly as simple to make as the reviews state! I made it by the recipe the first time, but next time will decrease the sugar as suggested. My loaves did not rise in 30 minutes as the recipe stated... it took probably double that. When they didn't rise much in thirty minutes, I sat them ontop of the oven and they rose much quicker. Baked up beautifully! Family devoured it! Will make again and again!
