BBQ Pork for Sandwiches

This turned out better than a restaurant! After reading the reviews, I used a rump roast, about 4 pounds or so. I used one can of beer, and a little water (1/4 cup or so), and put salt and pepper on the outside of the meat, and let it cook on LOW for 8 hours. Once it was done, I used Sweet Baby Ray's BBQ sauce for the first time based on some suggestions... it was absolutely wonderful!

Swiss Cheese 'n' Onion Quiche

This is absolutely fabulous, but I made a LOT of changes because I like veggies. Gotta sneak them into the kids' diet somehow! Here's what I did: 3T butter 1 pre-made pie crust (I don't know what a pastry shell is?) 1/2 onion, chopped (it was a big one) 8oz shredded swiss (not sure how many cups) 1T flour 8 eggs 1 1/2 cups half and half 1/4 t salt 1 1/2 cups chopped ham 1 c chopped coarse mushrooms 1 c shredded fresh spinach I followed the directions basically... pie crust, I sauteed the mushrooms with the onions and put them on the crust, then the ham, then the spinach, then the cheese, and because of all of the veggies and other things I had to make a lot more of the egg mixture. I had a 9.5 inch pie pan. I made it for breakfast tomorrow, but my son had a small piece after school for snack, and said it was awesome - it turned out really, really yummy. Next time, because mine was so thick, I would probably bake it longer at a lower temperature. In order for the egg mixture to be done, it took awhile to bake and the top is pretty brown. Overall fabulous!

Linda's Lasagna

I made some modifications, but it was very good. My only complaint is that there wasn't enough sauce, but I'm someone that likes lots and lots of sauce. I mixed the cheese mixture with a hand mixer to make sure there weren't any cottage cheese curds, and I used shredded parmesan in addition to grated parmesan. Very yummy though!

Chocolate Bar Fondue

This tasted wonderful! I didn't add the sugar, and I used one bag of semi sweet chocolate chips, and one bag of milk chocolate chips, and no water. Fabulous!

Ultimate High Altitude Chocolate Chip Cookies

I'm a Colorado/Denver area native, and have tried so many recipes. This tastes good but still spreads and is kind of thin. Not AS thin as the others, but still thinner than I had hoped. Next time I'm going to try using half shortening (butter flavored) and half butter to see if that helps.

Sopapilla Cheesecake Dessert

I thought this was just okay, but everyone else loved it! I put an egg in the cream cheese mixture as someone else suggested and drizzled honey over the top. I think the honey on top was fabulous!

Eclair Cake

This is a favorite family recipe, just wonderful! It really does need to set for it to taste best, although I have made it last minute and lightly sprayed the graham crackers in each layer with a water bottle. It helped them to get soft, like they're supposed to be!

Pumpkin Bread IV

Absolutely wonderful! I made a few changes, 1 1/4 cup oil, and 1 cup brown sugar, 2 1/2 cups white sugar. It probably could have done with even less sugar if you really wanted to save calories. I had two storebought cans of pumpkin, so it was a little more than 3 cups. This was SO good and made a ton!!

Eileen's Spicy Gingerbread Men

These were awesome! They spread more than I thought they would, so I had some stuck together. But the flavor was awesome, I had several people tell me they loved them because they were spicier. I used brown sugar instead of white sugar, and used ginger, cinnamon and pumpkin pie spice, because it was all I had on hand. I frosted them with my buttercream frosting, but not covering the entire cookie. (They were footballs, so the laces and sides were white.) They were fabulous!

Pumpkin Pancakes

Very, very, very yummy! I followed the recipe almost exactly, but I didn't have allspice, so I used a little bit of pumpkin pie spice. My only complaint would be that the spices weren't strong enough. I would definitely double them, at LEAST next time. Although I like things with lots of flavor... :) Fabulous recipe, thanks for sharing!

German Apple Cake I

This was absolutely wonderful, although I made a ton of adjustments to make it low calorie. 1/4 cup oil, 3/4 cup applesauce. 1/2 cup brown sugar, 1/2 cup white sugar. I also had a pear that was going to go bad so I used that in the apples too. I realized after mixing the first few ingredients together that I was out of flour - so I used 2 cups whole wheat flour. I used 3t cinnamon, and 1t pumpkin pie spice for a bit more spice. The adjustments were purely for calories' sake - not because anything tasted bad. This was SO good by itself! But then I thought about a glaze for it and couldn't help myself. Now THAT wasn't so healthy... 1/2 cup butter, 1/2 cup brown sugar, 2T milk melted together in a saucepan. OMG yum!!! Drizzle a little on top and it's fabulous. I'm glad that I cut the sugar in half in the cake though for sure!

The Best Lemon Bars

WOW yummy! I used a smaller pan (7x10ish I think) so increased the cooking time a bit accordingly, and used the juice from 3 lemons instead of 2. Everything else I did as written, and these are absolutely wonderful! I put them in the fridge to harden a little faster because I wanted to try them! Absolutely wonderful!

Bacon Broccoli & Raisin Salad

Very, very yummy!! I don't know how much 2.1 ounces of bacon is, because we always just put about 8 slices of bacon in, but this is a very yummy salad. It needs to be eaten quickly though, and isn't as good the next day because the bacon starts to absorb the dressing and gets mushy. Cooking the bacon until crispy, without being burnt, is definitely the best - it adds to the crunch of the salad, and takes a bit longer to mushify. (Is that a word?) ;)

Such a classic, and you can use so many different types of cereals! A friend of mine used the fruity krispies (Sorry I don't remember the name) and they were so good, although a tad sweet. Experiment!

Super Sausage Gravy

This was very, very good! Next time I might want it a little more saucy though, there was a TON of sausage in the actual gravy. Good flavor though, great recipe!
