Italian Peas
I was looking for something to spiff up boring frozen peas to get the fam to eat them without force - saw this recipe and was like OK I'll give it a try but I doubt it'll be good because they aren't adding much - BOY WAS I WRONG! I used butter instead of olive oil and caramelized the onions (diced) - then added the peas and the rest of the ingredients...just sprinkled a few chicken bullion granules and water over the top instead of the broth. the taste was phenomenal. I ran out and wanted more, and again kinda craved them the next day - who'da thunk it?? Hit a grand slam with this one!!

Unbaked Chocolate Oatmeal Cookies
AWESOME!!! Needed a project to do, so I made these with the 3yo that I nanny. She loved making worm and ball shapes with the mixture. I altered just a bit, as suggestions said it would be gooey: We added an extra cup of oatmeal, and for personal taste used 1c. of splenda brown sugar in place of the 2c. white sugar, 2c. white sugar would have been too sweet for us! For our optional ingredients we used 1/2c. chopped pecans and 1/4c. chocolate chips...She was so proud of her plate of cookies and got a kick out of the fact that they "bake" in the fridge, lol. Came out delish!!

Scalloped Potatoes and Onions
PERFECTION!! I used to hate these when I was little - but my mom always used the box kind...thought of giving them a try as an adult and came across this homemade recipe, we LOVED it - so easy and SO yummy! Even while I'm unemployed I can enjoy a yummy meal without breaking the bank!! Only thing is that the mayo didn't dissolve completely in the saucepan and so we had a few mayo lumps, but oh well, we'll remember that next time!! (because there will be a next time) Also, we added a touch of granulated garlic to the sauce, just bc we like garlic :)
