Chicken and Leek Casserole
I was looking to use the leeks I got from the farmer's market This is like a super fast chicken pot pie! My family loved it! I did use chicken broth instead of wine because my kids don't like the taste of it.

Corned Beef and Cabbage II
Wow! I agree with everyone else - best tasting, most moist corned beef! I did what HeyChelle suggested and threw it all in the slow cooker since it was too nice outside! Did cabbage & apples on stove top - yum! Thank you!!

Chocolate Zucchini Cake II
My kids LOVE this cake, especially for their birthdays! I found a low-fat version where you swap out the butter for low-fat mayo and use canola oil instead of vegatable. Sprinkle with 1/2 cup semisweet chips & 2 tbls. finley chopped pecans, then bake. Awesome!
