Easy Granola Bars
These were indeed easy. I reduced and put in 1 cup of sweetened condensed milk and made up the rest of the liquid with 3/4 cup water and then stirred all into the melted butter (I will omit the butter next time). The bars turned out sweet enough for me. I greased and lined my pan with parchment paper so the slab released with no effort at all. I cut them with pastry cutter pretty soon after I took the pan out of oven. This is a great base recipe that allows you to play around with the add-ins. I added lots of different stuff like almonds, walnuts, sunflower seeds, pumpkim seeds, dried cranberries, chocolate chips, butterscotch morsels, sesame seeds, flax seeds and even psyllium. I just made sure that everything totaled up to 3.5 cups and the texture turned out perfectly fine.

Whole Wheat Sweet Potato Muffins
these were delicious! made changes depending on what I had. Also tried to lower fat & sugar content. I am very happy with my changes. Will definitely revisit this recipe! changes: 1 cup sweet potato 1 cup whole wheat flour 1 cup quick oats 1 teaspoon baking soda 1/2 teaspoon salt 1/2 teaspoon ground cinnamon 1/8 teaspoon ground nutmeg 1/3 cup apple sauce 2 eggs 1 teaspoon vanilla extract 1/3 cup honey 1/3 cup fat free yogurt for topping: 1/8 cup oatmeal 1/8 cup brown sugar 1/4 cup almonds 1/4 teaspoon cinnamon 1/8 cup all-purpose flour 1 tbs butter

Garlic Cheese Quick Bread
added extra 1/2 tsp of garlic powder, 1 tsp onion powder, 1 tsp parsley flakes & 1/2 tsp of salt. also sprinkled extra cheddar & parmesan on top before baking. This is really good, great texture, delicious & will go perfectly with soup. i may lessen the sugar a little bit next time and also try using butter instead of oil for extra flavor.
